Pear Salad With Carmalized Pecans

Ingredientes

  • 1/2 c. sugar
  • 2 Tbsp. water
  • 1 c. pecan halves, lightly toasted
  • 1/4 c. extra-virgin extra virgin olive oil
  • 2 Tbsp. fresh lemon juice
  • 1 clv garlic, pressed
  • 1 tsp salt
  • 1/4 tsp freshly grnd pepper
  • 4 c. arugula
  • 2 x heads Boston lettuce (about 4 c.)
  • 3 x Bosc pears, peeled, cored, and diced
  • 1/3 c. minced green onions (white part only)
  • 1/2 c. crumbled blue cheese

Direcciones

  1. Lightly grease a cookie sheet. Set aside. In a small saucepan bring sugar and water to a boil. Increase heat to medium-high and cook syrup without stirring till mix turns golden brown, about 10 min. Remove from heat. Stir in pecans, then spread pecans in a single layer on prepared sheet. Let stand till cold, then break into pcs.
  2. In a c., whisk together extra virgin olive oil, lemon juice, garlic, salt, and pepper till thoroughly combined. In a large serving bowl, tear arugula and Boston lettuce into strips. Add in pears, green onions, cheese, and pecans. Drizzle dressing over top and toss to coat.
  3. Makes 6 servings.
