Ingredientes

  •     cooking spray
  • 2 lrg pears
  • 1/3 c. brown sugar
  • 1/2 c. whipped lite hard silken tofu see directions
  • 1 Tbsp. canola oil
  • 1 x egg
  • 1 tsp vanilla
  • 1 1/4 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/8 tsp allspice
  • 1 c. whole-wheat flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/8 c. golden brown raisins

Direcciones

  1. Pre-prep: Peel, core and finely dice pears to yield about 1 c. per pear. Blend tofu: whip tofu in a small food processor or possibly blender till it reaches the consistency of mayonnaise. Alternatively, whip with a hand blender. A handheld electric mixer will not work. Be patient: it takes several min. Store tightly covered in refrigerator up to one week. Measure as needed.
  2. Preheat oven to 375F. Coat muffin tin with cooking spray; set aside.
  3. In large mixing bowl, mix pears with sugar. Add in tofu, oil, egg and vanilla. Stir to blend.
  4. Add in remaining ingredients, and stir quickly just till mixed, taking care to not overmix or possibly muffins will be touch. Lumps are good.
  5. Divide batter among prepared muffin c.. Bake till tester inserted in the center of the muffins comes out clean, about 20 min.
