Ingredientes

  • 2 large cooking apples
  • 3 tbsp superfine sugar
  • 2 tbsp unsalted butter
  • 3 1/2 oz(100g) wheat and rye bread, pulsed into breadcrumbs
  • 1/4 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1 1/4 cup heavy cream
  • 4 tbsp confectioners sugar
  • juice of 1 lemon
  • 1 1/2 tbsp toasted hazelnuts, very roughly chopped

Direcciones

  1. Peel and core the apples and cut them into chunks. Put them in a saucepan with the superfine sugar and 1 tbsp water and cook until they are completely tender. Stir every so often and mash the fruit down with the back of a wooden spoon. put it into a bowl to cool
  2. Melt the butter in a pan and add the breadcrumbs and the brown sugar. Saute stirring constantly over a medium heat until the crumbs are golden. Add the cinnamon and continue to cook for about a minute. leave to cool.
  3. Whip the cream, adding the confectioners sugar and squeeze of lemon (add the lemon before the cream is too thick as the acid in the lemon has a thickening effect), then layer the stewed apples, breadcrumbs, and cream mixture in a glass bowl, ending with a layer of cream. Scatter with the chopped hazelnuts
