- Peel and core the apples and cut them into chunks. Put them in a saucepan with the superfine sugar and 1 tbsp water and cook until they are completely tender. Stir every so often and mash the fruit down with the back of a wooden spoon. put it into a bowl to cool
- Melt the butter in a pan and add the breadcrumbs and the brown sugar. Saute stirring constantly over a medium heat until the crumbs are golden. Add the cinnamon and continue to cook for about a minute. leave to cool.
- Whip the cream, adding the confectioners sugar and squeeze of lemon (add the lemon before the cream is too thick as the acid in the lemon has a thickening effect), then layer the stewed apples, breadcrumbs, and cream mixture in a glass bowl, ending with a layer of cream. Scatter with the chopped hazelnuts
