Pecan Crusted Monkfish With Balsamic Glaze

Ingredientes

  • 4 Tbsp. melted butter or possibly extra virgin olive oil
  • 1/3 c. finely crushed toasted pecans
  • 1 lrg shallot, chopped
  • 1/3 c. plain bread crumbs (preferably fresh)
  • 3 Tbsp. minced parsley
  •     Juice of 1 lemon
  •     Salt and pepper to taste
  • 6 x (6-oz) monkfish fillets
  • 1/2 c. chicken broth
  • 2 Tbsp. balsamic vinegar
  • 3 Tbsp. brown sugar
  • 2 Tbsp. soy sauce
  • 1 tsp cornstarch
  • 1 tsp cool water

Direcciones

  1. To prepare fish: Preheat oven to 425 degrees. Mix butter or possibly extra virgin olive oil with pecans, shallot, bread crumbs, parsley, lemon juice and salt and pepper. Proportionately coat fish fillets with pecan mix and place in baking dish. Bake about 15 min, till fillets flake with a fork and coating is golden brown and crispy.
  2. To prepare glaze: In a small saucepan, combine chicken broth, vinegar, sugar and soy sauce. Bring to a boil and cook 2 min. Mix cornstarch and water together and pour into boiling sauce. Continue cooking for about 1 minute, till sauce thickens. Remove from heat.
  3. Serve fish with glaze drizzled over top and around the plate.
