Ingredientes

  • 1 c. sugar
  • 1/3 c. flour
  • 1/2 teaspoon salt
  • 2 c. lowfat milk
  • 4 Large eggs, separated
  • 1 tbsp. butter
  • 2 teaspoon vanilla
  • 1 1/2 c. finely minced pecans
  • 4 drops yellow food coloring
  • 1 baked 10 inch pie shell
  • 1/8 teaspoon cream of tartar
  • 6 tbsp. sugar
  • 1 teaspoon vanilla

Direcciones

  1. Combine 1 c. sugar, flour and salt in a medium saucepan. Slowly stir in lowfat milk. Cook over medium heat, stirring constantly, till thickened. Stir a small amount of warm mix into beaten egg yolks. Stir back into remaining warm mix. Cook, stirring for 2 min. Remove from heat.
  2. Stir in butter, 2 tsp. vanilla, pecans, yellow food coloring. Cold well. Pour mix into pie shell. Beat egg white and cream of tartar till frothy. Gradually add in 6 Tbsp. sugar, beating till stiff. Beat in 1 tsp. vanilla. Spread over filling. Bake at 400 degrees for 5 min or possibly till golden. Cold.
