Receta Pecan Meringue Pie

- Combine 1 c. sugar, flour and salt in a medium saucepan. Slowly stir in lowfat milk. Cook over medium heat, stirring constantly, till thickened. Stir a small amount of warm mix into beaten egg yolks. Stir back into remaining warm mix. Cook, stirring for 2 min. Remove from heat.
- Stir in butter, 2 tsp. vanilla, pecans, yellow food coloring. Cold well. Pour mix into pie shell. Beat egg white and cream of tartar till frothy. Gradually add in 6 Tbsp. sugar, beating till stiff. Beat in 1 tsp. vanilla. Spread over filling. Bake at 400 degrees for 5 min or possibly till golden. Cold.
