Penne Puttanesca

Easy and quick pasta dish. I love kalamata olives, they add a nice briney bite to the dish.

Ingredientes

  • 1 lb penne pasta
  • 1/3 cup olive oil
  • 3 cloves garlic, crushed
  • 1 tsp crushed red pepper flakes
  • 5 med tomatoes (2lbs) chopped or 28oz can plum tomatoes
  • 7oz pitted kalamata olives, coarsely chopped
  • 8 drained anchovy fillets, chopped coarsely (opt)
  • 1/3 cup drained capers, rinsed
  • 1/3 cup chopped fresh flat leaf parsley
  • 3 tbsp finely shredded fresh basil

Direcciones

  1. Cook pasta in lg pot of boiling water, uncovered, til al dente
  2. Heat oil in lg skillet, cook garlic, stirring 1 min. Add crushed red pepper and tomatoes, cook 5mins, stirring.
  3. Add remaining ingredients cook stirring occasionally about 5 mins or till sauce thickens slightly.
  4. Add drained pasta to the skillet toss gently to combine.
