Receta Peperonata Chicken Pasta
Today is Secret Recipe Club reveal day for Group C! I hope everyone had a great V-Day!
I was assigned the super sweet blogger Annie at Annie’s Noms. And, when I say “super sweet,” I really mean it. Annie has posted some delicious decadent, sugary sweets and it was hard to not pick one. As I was knee deep in lemons when I received the assignment from Debbi, it was hard not to pick Doubly Lemon Cupcakes or Lemon Short Bread. We are trying to do better at EE and cut some of the sweet stuff out, so I searched through Annie’s blog for a healthy dish. I found a great one for Peperonata with Chicken. I thought it sounded delicious and it included simple and fresh flavors. I couldn’t help myself and added some pasta.
Peperonata Chicken Pasta
- based on Peperonata with Chicken from Annie’s Noms
- 1 T. extra virgin olive oil
- 1 lb. boneless chicken breast, cut into 1/2 inch cubes
- 1 large yellow onion, sliced thin
- 2 garlic cloves, minced
- 1 yellow bell pepper, de-seeded and cut into thin strips
- 1 green bell pepper, de-seeded and cut into thin strips
- 1 red bell pepper, de-seeded and cut into thin strips
- 2 (14.5 oz.) cans diced or crushed tomatoes (I actually used 1 can of San Marzano crushed tomatoes and 1 can of fire roasted diced tomatoes.)
- 1/2 t. sugar
- Salt and pepper to taste
- 2 T. chopped fresh basil
- 1 lb. penne pasta, cooked according to directions
Heat olive oil in a large skillet. Add chicken and lightly brown. Add onions, garlic and bell peppers. Cook on medium heat for about 12 minutes, stirring often. Onions should be browned a bit and peppers should be soft. Add tomatoes, sugar and salt and pepper. Simmer for about 20 minutes.
Add basil and toss with pasta. Serve.
This was really delicious and proved to me that you can make a great pasta dish without cheese. Shocking, isn’t it?
Do you remember the Versatile Blogger Awards that were making the rounds a couple of years ago. I loved the “7 Crazy Things” part of that award. I think we all should post crazy things about us yearly so we can revisit what makes us unique and maybe, more importantly, simply remember to be spontaneous and carefree.

1) I can’t cut a slice of bread straight to save my life, they always look more like door stops.
2) I’ve never used a box of cake mix.
3) I’m addicted to buying expensive handbags.
4) I’m also addicted to buying cookbooks, I have over 80 and my wishlist keeps growing.
5) I am way too close to my car, I actually talk to him when I’m driving.
6) I record The Jeremy Kyle show every day, so even if I’m out I can catch up later, I love having a good old laugh at all the people they manage to find.
7) I never order eggs in a restaurant in case they’re not free range.
I definitely share the cookbook addiction, Annie. I think I may have over eighty as well.
