ix.%20%20Then%20mix%20on%20low%20until%20the%20butter%20is%20just%20incorporated%20into%20the%20flour,%20making%20it%20look%20like%20cornmeal%20or%20buttery%20flakes.%20%20Make%20a%20well%20in%20the%20center,%20add%20the%20egg%20and%20lemon%20juice,%20and%20mix%20on%20low%20until%20just%20combined,%20to%20the%20point%20where%20it%20doesn%E2%80%99t%20pull%20into%20a%20ball%20but%20is%20about%20to.%20%20Gather%20with%20your%20hands,%20wrap%20in%20plastic,%20flatten%20to%20a%20disk%20and%20refrigerate%20for%20about%2030%20minutes.%3C/p%3E%3Cp%3EIf%20you%20have%20a%20food%20processor,%20use%20the%20directions%20above%20but%20pulse%20the%20butter%20into%20the%20flour,%20and%20then%20the%20wet%20ingredients%20into%20that%20mixture.%3C/p%3E%3Cp%3EIf%20you%20have%20neither,%20don%E2%80%99t%20despair!!%20You%20have%20ten%20awesome%20little%20kitchen%20gadgets%20at%20the%20ready!%20%20Use%20the%20tips%20of%20your%20fingers%20to%20blend%20the%20butter%20into%20the%20flour,%20being%20sure%20not%20to%20use%20your%20whole%20palm%20or%20the%20fleshy%20part%20of%20your%20fingers%20(you%20want%20as%20little%20of%20the%20heat%20from%20your%20hands%20transferring%20to%20the%20dough).%20%20Then%20use%20a%20fork%20to%20pull%20the%20egg%20and%20lemon%20into%20the%20mixture.%3C/p%3E%3Cp%3EOnce%20the%20dough%20has%20been%20chilled%20to%20where%20it%E2%80%99s%20not%20sticky%20but%20not%20too%20hard%20to%20roll,%20flour%20a%20pastry%20board,%20parchment%20paper%20or%20Silpat%20with%20rice%20flour,%20and%20roll%20to%20desired%20thickness.%20%20Fit%20into%20a%20pie%20plate,%20tart%20plate%20or%20slide%20onto%20a%20baking%20sheet%20for%20the%20perfect%20galette%20crust!%3C/p%3E%3Cp%3EI%20filled%20this%20galette%20with:%3C/p%3E%3Cp%3EThen%20brushed%20the%20top%20with%20egg%20white%20and%20baked%20it%20for%2035%20minutes%20until%20the%20edges%20were%20lightly%20browned.%20%20And%20then%20I%20ate%20it.%20%20The%20whole%20thing.%20%20Ok,%20I%20shared%20a%20little%20and%20it%20took%20a%20few%20days,%20but%20someone%20may%20have%20seen%20me%20walking%20to%20the%20subway,%20eating%20it%20with%20my%20fingers.%20%20May.%3C/p%3E){kind=link}
