- 1 (1-inch piece) fresh ginger (peeled and chopped)
- 7 clove garlic (peeled and chopped)
- 3 tablespoon red wine vinegar
- 1 tablespoon ají amarillo paste (see note)
- ¼ teaspoon freshly cracked black pepper
- 3 tablespoon soy sauce
- 1 pound dried fettuccine (or other ribbon pasta) I used spinach flavored
- 2 tablespoon canola oil
- 1 pound ground beef sirloin (90% lean)
- 1 medium red onion (peeled and finely diced)
- 2 plum tomatoes (halved, seeded, and finely diced)
- 1 cup chicken stock
- ½ cup freshly grated Parmesan cheese
- 2 tablespoon minced cilantro
- kosher salt (as needed)
