.%20%20We%20make%20it%20the%20saturday%20before%20Palm%20sunday.%20I%20did%20not%20make%20it%20this%20year,%20since%20we%20were%20travelling.%20The%20next%20big%20event%20is%20Maundy%20thursday%20%20or%20Pesaha%20when%20pesaha%20paal%20and%20pesaha%20appam%20are%20made%20to%20commemorate%20passover.%20Pass%20over%20is%20celebrated%20by%20Jews%20and%20Christians%20equally.%20however,%20in%20addition%20to%20the%20Exodus%20from%20Egypt%20under%20the%20leadership%20of%20Moses,%20Christians%20also%20celebrate%20the%20last%20supper%20which%20is%20the%20last%20meal%20Jesus%20Christ%20shared%20with%20his%20disciples%20before%20his%20crucification.%3C/p%3E%3Cp%3EPesaha%20appam%20is%20traditionally%20a%20bread%20that%20is%20made%20from%20non-fermented%20batter.%20In%20my%20part%20of%20Kerala,%20pesaha%20appam%20is%20called%20kalathappam%20and%20it%20is%20shallow%20fried%20in%20oil%20with%20coconut%20cuts%20and%20onion.%20In%20my%20dear%20D's%20part%20of%20Kerala,%20pesaha%20appam%20is%20made%20in%20two%20different%20styles,%20both%20steamed%20and%20called%20Kurisappam%20and%20Indriappam.%3C/p%3E%3Cp%3EI%20feel%20traditions%20should%20be%20kept,%20to%20help%20our%20kids%20understand%20the%20culture%20that%20their%20parents%20and%20ancestors%20grew%20up%20in.%20It%20is%20traditional%20to%20narrate%20the%20story%20of%20Exodus%20to%20the%20kids%20in%20the%20house%20together%20with%20the%20story%20of%20the%20holy%20week%20before%20cutting%20the%20appam.%3C/p%3E%3Cp%3EI%20made%20kalathappam%20this%20year%20and%20will%20try%20to%20make%20Kurisappam%20and%20Indriappam%20next%20year.%3C/p%3E%3Cp%3EA%20few%20things%20before%20we%20start:%3C/p%3E%3Cp%3EThe%20Paal%20tends%20to%20thicken%20a%20bit%20on%20resting,%20so%20make%20it%20to%20a%20runny%20consistency.%3C/p%3E%3Cp%3EI%20didnot%20have%20jaggery%20and%20used%20dark%20muscavado%20sugar%20instead.%20It%20tasted%20the%20same%20to%20be%20honest.%3C/p%3E%3Cp%3EPesaha%20Appam%20/%20Indri%20Appam%20/%20Kurisappam%20and%20Pesaha%20paal%3C/p%3E%3Cp%3EServes:%205-6%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EFor%20Appam:%3C/p%3E%3Cp%3ESoak%20urad%20dal%20for%20about%202%20hours.%3C/p%3E%3Cp%3EDrain%20the%20soaked%20urad%20dal%20and%20grind%20it%20to%20a%20smooth%20paste%20by%20adding%20as%20little%20water%20as%20possible.%20I%20add%20about%201/4%20cup%20of%20luke%20warm%20water.%3C/p%3E%3Cp%3EGrind%20(3)%20to%20a%20smooth%20paste.%3C/p%3E%3Cp%3EAdd%20urad%20dal%20paste%20and%20coconut%20paste%20to%20rice%20flour%20together%20with%20a%20pinch%20of%20salt.%20Combine%20everything%20well%20to%20make%20a%20smooth%20thick%20batter%20similar%20to%20idli%20batter.%3C/p%3E%3Cp%3EFor%20Kalathappam,%20heat%20one%20tbsp%20of%20oil%20in%20a%20pan,%20pour%20one%20ladle-full%20of%20the%20batter%20to%20the%20heated%20oil%20in%20the%20pan.%20Once%20the%20sides%20start%20to%20turn%20light%20brown,%20sprinkle%20a%20teaspoonful%20each%20of%20%20coconut%20cuts%20and%20thinly%20sliced%20pearl%20onions%20and%20press%20so%20they%20sit%20in%20the%20batter.%20Now%20turn%20the%20appam%20over,%20and%20the%20coconut%20and%20pearl%20onion%20will%20now%20face%20the%20oil.%20Add%20a%20few%20more%20drops%20of%20oil%20if%20the%20pan%20is%20dry.%20The%20appam%20is%20done%20when%20the%20bottom%20turns%20light%20brown.%20Allow%20to%20cool%20before%20serving.%3C/p%3E%3Cp%3EFor%20Kurisappam,%20transfer%20the%20batter%20to%20a%20well%20greased%20steaming%20tin.%20Alternatively,%20line%20the%20tin%20with%20banana%20leaf.%20Place%20the%20cross%20made%20with%20palm%20leaves%20you%20got%20from%20church%20on%20Palm%20Sunday%20at%20the%20middle%20of%20the%20batter.%20Cover%20the%20tin%20with%20aluminium%20foil.%20Let%20the%20water%20boil%20in%20steamer%20and%20steam%20in%20for%2025-35%20minutes.%20Let%20it%20cool%20before%20transferring%20to%20a%20serving%20dish.%3C/p%3E%3Cp%3EFor%20Indriappam,%20steam%20wrapped%20in%20banana%20leaves.%3C/p%3E%3Cp%3EFor%20Paal:%3C/p%3E%3Cp%3EMelt%20jaggery%20in%20half%20a%20cup%20of%20water.%20Once%20completely%20melted,%20pass%20through%20sieve%20to%20get%20rid%20of%20impurities,if%20any.%3C/p%3E%3Cp%3EMix%203%20cups%20of%20coconut%20milk%20and%20melted%20jaggery,%20stirring%20continuously%20over%20low%20flame.%20Add%20dried%20ginger%20and%20cumin%20and%20mix%20well.%3C/p%3E%3Cp%3EMix%20rice%20flour%20with%20luke%20warm%20water%20to%20form%20a%20paste.%20Add%20this%20to%20the%20coconut%20milk,%20cook%20the%20rice%20flour%20stirring%20constantly%20and%20the%20mix%20starts%20to%20thicken.%20This%20step%20gives%20the%20method%20it's%20traditional%20name%20(paal%20kurukkal,%20%E0%B4%AA%E0%B4%BE%E0%B5%BD%20%E0%B4%95%E0%B5%81%E0%B4%B1%E0%B5%81%E0%B4%95%E0%B5%8D%E0%B4%95%E0%B5%BD%20).%3C/p%3E%3Cp%3EHappy%20Easter!%3C/p%3E%3Cp%3ERecipe%20by%20Sherin%20Deepu%20of%20KuksKitchen%3C/p%3E%3Cp%3EAlso%20try%3C/p%3E%3Cp%3EIf%20you%20found%20this%20post%20useful,%20I%20would%20really%20love%20for%20you%20to%20pin%20it%20or%20share%20it%20with%20your%20Facebook%20fans%20or%20Twitter%20followe
