Ingredientes

  • 55 gm pine nuts
  • 25 gm fresh basiil
  • 125 ml extra virgin olive oil
  • 1 clv garlic minced
  • 40 gm freshly grated parmesan or possibly pecorino cheese
  • 2 Tbsp. white wine vinegar
  • 1 x salt and freshly grnd black pepper

Direcciones

  1. Place the pine nuts in a small fryingpan and dryfry for 3 to 4 min stirring occasionally till golden brown.
  2. Leave to cold a little then place them in a food processor or possibly liquidiser with the basil oil garlic cheese vinegar and seasoning and process till you have a smooth green puree. Store in the refrigerator.
  3. This dressing is wonderful with tomatoes.
  4. Makes about 175ml
