%3C/p%3E%3Cp%3EI%20was%20impressed%20by%20the%20product%20I%20received%20because%20as%20you%20can%20tell%20by%20the%20pictures,%20these%20were%20full-sized%20mushrooms,%20not%20little%20mushroom%20chips%20as%20you%20sometimes%20get%20with%20other%20types%20of%20dried%20mushrooms.%3C/p%3E%3Cp%3EFor%20the%20contest%20we%20were%20required%20to%20prepare%20an%20hors%20d%E2%80%99oeuvres%20using%20a%20package%20of%20dried%20morels%20sent%20from%20Marx%20Foods.%20Because%20it%20was%20around%20Easter%20time%20and%20it's%20now%20spring,%20I%20wanted%20to%20do%20something%20light.%20Nothing%20is%20lighter%20than%20phyllo%20pastry,%20so%20I%20settled%20on%20some%20sort%20of%20little%20tarts.The%20mushrooms%20were%20the%20inspiring%20ingredient.%20I%20had%20come%20across%20an%20onion%20pie%20(torta%20di%20cipolle)%20recipe%20that%20had%20dried%20porcini%20mushrooms%20in%20it,%20and%20a%20light%20bulb%20went%20off%20in%20my%20head...pie%20was%20the%20perfect%20use%20for%20these%20guys.%20Because%20I%20am%20proud%20of%20my%20Italian%20heritage,%20I%20chose%20to%20do%20a%20twist%20on%20the%20classic%20Italian%20Easter%20pie,%20torta%20pasqualina%20(sometimes%20called%20pizza%20rustica%20in%20other%20parts%20of%20Italy).%20When%20this%20pie%20was%20invented%20hundreds%20of%20years%20ago,%20eggs%20were%20a%20seasonal%20food%20as%20chickens%20at%20that%20time%20laid%20less%20than%20half%20the%20eggs%20conventional%20chickens%20do%20now,%20and%20mainly%20at%20springtime.%20Because%20of%20that,%20Easter%20pie%20was%20a%20riccota%20custard%20pie%20studded%20with%20hard-boiled%20eggs.%20Obviously,%20I%20couldn't%20put%20a%20whole%20hard-boiled%20egg%20into%20those%20little%20pie%20shells,%20so%20I%20subbed%20in%20toasted%20pine%20nuts,%20which%20have%20an%20egg%20shape%20and%20would%20help%20maintain%20the%20richness%20that%20egg%20yolk%20would%20yield.%20Also%20instead%20of%20using%20chard%20or%20beet%20greens%20to%20add%20a%20springtime%20green%20color,%20I%20used%20frozen%20spinach.%20I%20only%20needed%20a%20little%20bit%20of%20green%20vegetable,%20and%20frozen%20spinach%20is%20so%20convenient.%20It's%20perfect%20for%20when%20you%20are%20throwing%20a%20party;%20because%20of%20the%20convenience%20of%20phyllo%20shells%20and%20frozen%20spinach,%20it%20takes%20a%20little%20stress%20off%20the%20host/hostess%20without%20sacrificing%20anything.%20These%20are%20a%20great%20little%201-to-2-bite%20hors%20d%E2%80%99oeuvres.%20Using%20dried,%20reconstituted%20mushrooms%20was%20key%20in%20this%20recipe%20because%20overall%20they%20did%20not%20have%20a%20lot%20of%20moisture%20despite%20their%20reconstitution.%20These%20tarts%20would%20have%20been%20soggy%20had%20I%20used%20regular%20button%20or%20cremini%20mushrooms.%3C/p%3E%3Cp%3EI%20love%20the%20contrast%20between%20the%20crackle%20of%20the%20phyllo,%20the%20crunch%20and%20sweetness%20of%20the%20pine%20nuts,%20the%20creamy%20filling,%20and%20the%20chewy,%20earthiness%20of%20the%20mushrooms.%20Each%20tart%20looks%20so%20spring-appropriate%20with%20the%20bright%20green%20color%20and%20the%20bits%20of%20morel%20stud%20the%20top%20of%20each%20tart%20with%20their%20lacy%20texture.%3C/p%3E%3Cp%3EAlso,%20by%20no%20means%20do%20you%20have%20to%20make%20these%20just%20for%20Easter%20or%20springtime,%20thanks%20to%20the%20use%20of%20dried%20mushrooms,%20which%20can%20be%20found%20year-round.%20These%20would%20be%20great%20for%20any%20party%20where%20you%20need%20a%20fast,%20yet%20elegant%20starter.%3C/p%3E%3Cp%3EThanks%20Marx%20Foods%20for%20this%20delicious%20opportunity!%3C/p%3E%3Cp%3EPiccole%20Torta%20Pasqualina%20con%20Morels%20(Mini%20Easter%20Pies%20with%20Morels)%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20350%20degrees%20F.%3C/p%3E%3Cp%3E2.%20Pour%20enough%20hot%20water%20of%20the%20mushrooms%20to%20cover%20them%20completely.%20Allow%20them%20to%20sit%20until%20they%20are%20softened,%20about%2020%20min.%20Remove%20the%20mushrooms%20from%20the%20liquid;%20the%20liquid%20can%20be%20saved%20for%20stock%20or%20discarded.%20Pat%20the%20mushrooms%20on%20a%20clean%20cloth%20to%20remove%20all%20excess%20moisture.%20Coarsely%20chop%20the%20mushrooms%20and%20set%20aside.%20(Please%20note%20I%20soaked%20more%20than%204%20mushrooms%20because%20the%20sample%20was%20large%20enough%20that%20I%20have%20other%20plans%20for%20those%20mushrooms...post%20to%20come)%3C/p%3E%3Cp%3E3.%20Heat%20butter%20in%20a%20medium%20skillet%20over%20medium%20heat%20until%20melted,%20then%20add%20the%20shallot%20and%20cook%20until%20transparent.%20Add%20the%20mushroom,%20saute%20about%202%20min,%20then%20add%20the%20chopped%20spinach%20and%20blend%20all%20the%20ingredients%20together.%20Remove%20from%20the%20skillet%20and%20set%20aside%20to%20cool%20slightly.%3C/p%3E%3Cp%3E4.%20While%20the%20mushroom%20mixture%20cools,%20add%20the%20ricotta%20to%20a%20medium%20bowl%20and%20fold%20the%20Parmesan,%20marjoram,%20pine%20nuts,%20nutmeg,%20and%20cooled%20mushroom%20mixture.%20Season%20well%20with%20salt%20and%20pepper.%20You%20can%20t
