Ingredientes

  • 2 Tbsp. Extra virgin olive oil
  • 3/4 lb Mushrooms, sliced
  • 1 pkt Thinly sliced Canadian bacon, cut into matchstick-size strips (6-oz)
  • 1 x Green onion bunch, minced
  • 2 Tbsp. Liquid removed capers, (generous)
  • 1/2 lb Vermicelli, freshly cooked
  • 1 c. Grated Parmesan cheese
  • 1/2 c. Whipping cream
  • 1/4 c. Pine nuts, toasted
  •     Additional grated Parmesan cheese

Direcciones

  1. Heat oil in heavy large skillet over medium heat. Add in mushrooms; saute/fry till tender and beginning to brown, about 10 min. Add in bacon, green onions and capers; toss to combine. Add in vermicelli, 1 c. Parmesan, cream and pine nuts; toss till sauce thickens and coats pasta and mix is heated through. Season with salt and pepper. Transfer pasta to large shallow bowl. Serve, passing additional Parmesan separately.
