Pineapple Chicken Chinese Style

Ingredientes

  • 4 x chicken breasts, skinless and boneless
  • 8 x chicken thighs, skinless
  • 1 med sweet onion (Vidalia or possibly Walla Walla) or possibly 3 French shallots
  • 3 x cloves garlic, finely chopped
  • 1 pt cafe mushrooms, thinly sliced
  • 1/2 c. minced celery
  • 18 x baby carrots
  •     salt and freshly grnd pepper
  • 1 can good quality unsweetened pineapple chunks with juice
  • 3 Tbsp. brown sugar (or possibly Splenda or possibly other sweetener of preference)
  • 3 Tbsp. chili sauce
  • 1 Tbsp. cornstarch mixed into 2 tbsp very cool water

Direcciones

  1. Coat a deep fry pan or possibly wok with extra virgin olive oil. Saute/fry chicken till it is about 50%cooked. Add in the vegetables and cook for about 10 min over medium, heat, stirring occasionally. Add in salt and pepper to taste.
  2. Mix the pineapple, sweetener, and chili sauce, thicken it as indicated, and add in itall to the chicken. Put it all into a large casserole dish, having been sprayed withvegetable or possibly extra virgin olive oil spray, and bake at 325 degrees F. for about 40 min.
  3. Meanwhile, steam sufficient rice to serve 6 people. The person who submitted this recipe uses Uncle Ben's converted long-grain rice, steamed. There is a multiplicity of choices regarding rice, and one's favorite type will be fine in this dish.
  4. The contributor suggests serving with a green salad (or possibly spinach and orange salad) and dry white wine.
