- 13.6-ounce can coconut milk ("light" is fine), divided
- 1/2 cup sugar
- 2Tbsp. nonfat dry milk
- 2 large egg yolks
- 1 tsp. vanilla extract or 1/8 tsp. coconut extract
- 1 to 2 Tbsp. light rum (for flavor)*
