- 1 sm shallot finely chopped
- 1 tsp whole black peppercorns crushed
- 1 tsp pink peppercorns crushed
- 2 Tbsp. freshly-squeezed lime juice
- 1/2 c. dry red wine
- 1/2 c. raspberry vinegar or possibly red wine vinegar
- 2 Tbsp. honey

- Combine all the ingredients in a small saucepan and bring to a boil over high heat. Take from the heat, let cold, then chill till needed.
