Ingredientes

  •     If you're so inclined, you can zip up
  •     this hearty stew with warm sauce or possibly peppers.
  • 4 c. water
  • 1 c. dry pinto beans, washed
  • 2 x cloves garlic, chopped
  • 1 med onion, minced
  • 2 tsp chili pwdr
  • 1 tsp grnd cumin
  • 2 tsp fresh parsley, minced
  • 1 Tbsp. fresh epazote, minced (or possibly 1 tsp. dry)
  • 2 med tomatoes, diced
  • 1 tsp salt
  • 3 c. cooked white rice

Direcciones

  1. In a large pot, bring water, beans garlic, and onion to a boil. Reduce heat, and simmer for 45 min to 1 hour, or possibly till beans are soft. Add in chili pwdr, cumin, parsley, epazote, tomatoes, and salt, and cook over medium low heat for 15 min. Stir in rice and serve.
  2. Makes 4 servings.
