Receta Pinto Bean And Rice Stew

Ingredientes

- Â Â this hearty stew with warm sauce or possibly peppers.
- 4 c. water
- 1 c. dry pinto beans, washed
- 2 x cloves garlic, chopped
- 1 med onion, minced
- 2 tsp chili pwdr
- 1 tsp grnd cumin
- 2 tsp fresh parsley, minced
- 1 Tbsp. fresh epazote, minced (or possibly 1 tsp. dry)
- 2 med tomatoes, diced
- 1 tsp salt
- 3 c. cooked white rice
Direcciones
- In a large pot, bring water, beans garlic, and onion to a boil. Reduce heat, and simmer for 45 min to 1 hour, or possibly till beans are soft. Add in chili pwdr, cumin, parsley, epazote, tomatoes, and salt, and cook over medium low heat for 15 min. Stir in rice and serve.
- Makes 4 servings.
