Ingredientes

  • 1 lb boneless skinless chicken breast halves or possibly skinless turkey
  •     breast, cut into 1/2-inch cubes
  • 1/4 c. fresh lemon juice
  • 2 tsp extra virgin olive oil
  • 2/3 c. minced onions
  • 1 Tbsp. fresh ginger chopped
  • 2 c. tomatoes fresh, minced
  • 1/2 c. water (bottled)
  • 1 tsp dry thyme crumbled
  • 1 x bay leaf
  • 2 Tbsp. jalapeno sliced
  • 1/2 tsp salt
  • 1 c. long-grain white rice
  • 1 Tbsp. fresh parsley minced

Direcciones

  1. Marinate the turkey in the lon juice, covered, overnight in the refrigerator.
  2. Remove turkey from marinade, and reserve lemon juice.
  3. Heat the oil in the bottom of a 2- to 3-qt wide bottom, nonstick saucepanover medium heat. Saute/fry the onions for a few min till slightly softened.
  4. Add in the ginger and saute/fry for 1 minute more.
  5. Stir in the tomatoes, water, reserved lemon juice. thyme, bay leaf, jalapenopeppers and salt. Cover. Bring to a low simmer, lower heat and simmer for30 min. Add in the turkey continue to simmer for 2 min.
  6. Stir in the rice and return to a low simmer. Cover and gently simmer for 18minutes without lifting the lid.
  7. Remove pan from heat. Uncover and stir mix briefly. Cover and allow tostand for 5 min. Uncover and throw away bay leaf. Place remaining saucepancontents in a serving dish and sprinkle with parsley. Serve.
  8. Yield: 4 servings
