%20,stove%20top%20method.%3C/p%3E%3Cp%3EHaving%20spent%20a%20good%20portion%20of%20my%20life%20in%20Doha,%20I%20have%20to%20say%20that%20the%20thing%20I%20miss%20most%20about%20it%20is%20the%20variety%20of%20fabulous%20food%20available.%20Of%20course,%20here%20in%20Chennai%20there%20are%20many%20places%20that%20offer%20Arabic%20cuisine%20and%20some%20of%20them%20are%20really%20good..but%20in%20most%20cases,%20they%20miss%20the%20mark%20when%20it%20comes%20to%20Kaboose%20or%20Pita%20bread.%3C/p%3E%3Cp%3EI%20have%20seen%20a%20lot%20of%20recipes%20and%20have%20been%20planning%20to%20make%20them..but%20I%20was%20putting%20it%20off%20mainly%20because%20I%20still%20try%20to%20avoid%20a%20lot%20of%20experimenting%20in%20an%20oven.%20Recently%20though,%20while%20I%20was%20watching%20Masterchef%20Australia,%20I%20realised%20that%20the%20Pita%20can%20be%20cooked%20on%20the%20stove%20top%20too..%20!!%3C/p%3E%3Cp%3EAnd%20yesterday,%20everything%20just%20fell%20into%20place...%3C/p%3E%3Cp%3EThere%20are%20a%20few%20versions%20out%20there%20including%20some%20whole%20wheat%20pitas..but%20I%20just%20wanted%20to%20see%20how%20close%20I%20could%20come%20to%20recreating%20the%20taste%20we%20know%20and%20love..%3C/p%3E%3Cp%3EThe%20recipe%20is%20very%20easy,%20but%20the%20dough%20needs%20kneading%20time%20of%2015%20minutes%20and%20about%203%20hours%20to%20rise.%20So%20it%20has%20to%20be%20prepared%20in%20advance.%3C/p%3E%3Cp%3EIn%201/2%20cup%20lukewarm%20water,%20add%20the%20yeast%20and%20sugar.%20It%20has%20to%20bubble%20up%20and%20rise%20and%20totally%20dissolve.%3C/p%3E%3Cp%3EIn%20a%20big%20bowl,%20mix%20the%20flour%20and%20salt%20evenly.%20Make%20a%20well%20in%20the%20middle%20and%20add%20the%20yeast%20liquid.%20Just%20mix%20it%20through,%20and%20add%20the%201%20cup%20of%20lukewarm%20water%20slowly%20to%20form%20a%20sticky%20and%20loose%20dough.%3C/p%3E%3Cp%3EOn%20a%20flat%20surface,%20throw%20some%20flour%20,%20tip%20out%20the%20wet%20sticky%20dough%20about%2010%20to%2015%20minutes%20till%20it%20is%20not%20sticky%20any%20more..%20Now%20the%20consistency%20will%20be%20elastic,%20still%20loose,%20but%20smooth.%3C/p%3E%3Cp%3EIn%20a%20clean%20bowl,%20coat%20with%20some%20oil.%20I%20poured%20about%201%20tsp%20,%20coated%20the%20base,%20put%20the%20dough%20inside,%20and%20turned%20it%20all%20over%20till%20the%20oil%20was%20coated%20evenly.%3C/p%3E%3Cp%3ELeave%20it%20to%20rest%20with%20a%20lid%20on,%20or%20a%20towel%20to%20let%20it%20rise.%20the%20dough%20doubled%20in%20size%20in%20about%202%20and%201/2,%20to%203%20hours.%3C/p%3E%3Cp%3EAgain%20flour%20the%20work%20surface,%20knead%20the%20dough,%20roll%20into%20a%20rope%20shape.%20now%20cut%20out%20lemon%20sized%20dough,%20roll,%20and%20then%20flatten%20it%20out%20like%20chappatis..%20I%20made%20mine%20slightly%20smaller.%20Thin%20it%20out%20as%20much%20as%20u%20can.%3C/p%3E%3Cp%3EOn%20a%20%20really%20hot%20tawa,%20with%20the%20flame%20on%20medium,%20just%20put%20a%20flattened%20disk%20of%20dough.When%20u%20see%20small%20bubbles%20starting%20to%20rise,%20turn%20over.%20Slowly%20press,%20and%20increase%20the%20flame%20to%20high.%20this%20should%20puff%20up%20the%20bread.%20Once%20it%20puffs%20up,%20bring%20the%20flame%20back%20to%20medium,%20see%20that%20it%20is%20cooked%20evenly%20on%20both%20side,%20take%20it%20off%20the%20tawa.%3C/p%3E%3Cp%3EStack%20cooked%20breads%20in%20a%20basket%20or%20dish%20lined%20with%20a%20tea%20towel%20.%20The%20bread%20was%20soft,%20evenly%20cooked%20and%20delicious..%3C/p%3E%3Cp%3EYou%20can%20freeze%20left-over%20cooked%20breads%20and%20also%20refrigerate%20the%20dough%20upto%20a%20week.%20Enjoy.%3C/p%3E){kind=link}
