%20pizza.%3C/p%3E%3Cp%3EWhat%20kind%20of%20person%20doesn't%20have%20time%20to%20throw%20together%20a%20meal%20for%20her%20loved%20ones?%20Well,%20as%20it%20turns%20out,%20every%20kind%20of%20person,%20myself%20most%20definitely%20included.%20Sometimes%20I%20just%20don't%20feel%20like%20cooking%20dinner%20after%20a%20day%20of%20work%20or%20I%20haven't%20been%20to%20the%20grocery%20store%20yet%20that%20week.%20Obstacles%20often%20abound,%20and%20on%20those%20occasions,%20I%20have%20a%20new%20appreciation%20for%20good%20ol'%20Papa%20John.%3C/p%3E%3Cp%3EThat's%20not%20to%20say%20that%20I%20don't%20crave%20pizza%20even%20when%20I%20do%20have%20the%20time%20and%20energy%20to%20make%20supper.%20My%20boyfriend%20and%20I%20are%20both%20big%20fans%20of%20any%20and%20all%20breakfast%20items,%20so%20one%20of%20our%20new%20favorites%20is%20breakfast%20pizza...for%20dinner.%20Breakfast%20for%20dinner%20is%20certainly%20nothing%20new,%20but%20it's%20definitely%20something%20awesome.%20I'll%20never%20get%20tired%20of%20it,%20and%20I'll%20never%20get%20tired%20of%20the%20idea%20of%20a%20breakfast%20pizza,%20as%20the%20possibilities%20for%20toppings%20are%20positively%20endless.%20Plain%20ol'%20bacon,%20eggs,%20and%20cheese%20would%20be%20fine,%20or%20you%20can%20get%20fancy%20with%20kale%20or%20ricotta%20or%20smoked%20salmon%20or%20asparagus.%20You%20can%20vary%20your%20crust%20(I%20highly%20recommend%20the%20Krusteaz%20Garlic%20and%20Onion%20Flatbread%20Mix,%20though%20any%20of%20their%20mixes%20would%20be%20more%20than%20sufficient),%20too.%3C/p%3E%3Cp%3EFor%20this%20pizza,%20I%20took%20a%20Mexican%20ruta%20(that%20means%20route).%20Refried%20beans%20mixed%20with%20salsa%20composes%20the%20base%20layer,%20while%20my%20selection%20of%20toppings%20included%20cilantro,%20pepper%20jack%20cheese,%20bacon,%20and%20avocado.%20Hot%20sauce%20is%20pretty%20much%20an%20essential%20accompaniment,%20and%20sour%20cream%20wouldn't%20hurt%20either.%3C/p%3E%3Cp%3EAs%20pizzas%20go,%20this%20one%20is%20probably%20best%20served%20as%20breakfast%20for%20dinner.%3C/p%3E%3Cp%3ESpicy%20Breakfast%20Pizza%20(for%20Dinner)%3C/p%3E%3Cp%3EPrep%20time:%2020%20minutes%3C/p%3E%3Cp%3ETotal%20time:%2045%20minutes%3C/p%3E%3Cp%3EEffort:%20Easy%3C/p%3E%3Cp%3ENumber%20of%20servings:%206-8%3C/p%3E%3Cp%3EIngredients:%20Directions:%3C/p%3E%3Cp%3EHeat%20oven%20to%20475%20degrees%20F.%20Lightly%20grease%20two%20baking%20sheets.%3C/p%3E%3Cp%3EStir%20together%20flatbread%20mix%20and%20enclosed%20yeast%20packet.%20Add%20warm%20water%20and%20oil,%20stirring%20until%20dough%20forms%20a%20ball.%20To%20activate%20yeast,%20cover%20dough%20and%20let%20rest%2010%20minutes,%20or%20until%20oven%20is%20hot.%3C/p%3E%3Cp%3EShape%20dough%20by%20dividing%20into%20two%20equal%20portions.%20With%20floured%20hands,%20pat%20out%20dough%201/8%20to%201/4-inch%20thick,%20forming%20nice%20ovals%20on%20prepared%20pans.%3C/p%3E%3Cp%3EBake%20for%205-7%20minutes%20or%20until%20edges%20begin%20to%20harden%20a%20little.%20Remove%20from%20the%20oven%20and%20begin%20adding%20toppings.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20mix%20the%20refried%20beans%20and%20salsa.%3C/p%3E%3Cp%3ESpread%20a%20thin%20layer%20of%20refried%20beans%20onto%20each%20partially%20baked%20crust.%3C/p%3E%3Cp%3EMake%20two%20or%20three%20small%20indents%20in%20the%20beans%20of%20both%20pizzas%20with%20the%20back%20of%20a%20spoon%20and%20crack%20an%20egg%20into%20each%20indent.%3C/p%3E%3Cp%3ESeason%20the%20eggs%20with%20salt%20and%20pepper%20and%20sprinkle%20the%20pepper%20jack%20cheese%20over%20the%20top%20of%20the%20pizza.%3C/p%3E%3Cp%3ECook%20the%20pizzas%20for%205-10%20minutes%20more,%20keeping%20a%20close%20eye%20on%20them.%20Once%20the%20crust%20is%20slightly%20browned%20at%20the%20edges%20and%20your%20eggs%20are%20jiggly%20when%20you%20gently%20move%20the%20tray%20but%20the%20whites%20have%20become%20opaque,%20remove%20the%20pizzas%20from%20the%20oven.%20The%20eggs%20will%20continue%20to%20cook%20slightly%20after%20the%20pizzas%20are%20removed.%3C/p%3E%3Cp%3ETop%20with%20avocado,%20chopped%20bacon,%20and%20cilantro%20and%20serve%20immediately.%3C/p%3E){kind=link}
