%20and%20I%20grabbed%20some%20tomatoes%20and%20herbs%20to%20make%20more%20of%20the%20passata%20that%20is%20the%20core%20of%20the%20recipe%20and%20turn%20it%20into%20a%20fresh%20tomato%20sauce%20to%20go%20one%20one%20of%20the%20pies.%20The%20base%20for%20the%20sauce%E2%80%93long-roasted%20tomatoes%20blended%20with%20fresh%20basil%E2%80%93is%20solid,%20and%20so%20I%20felt%20it%20was%20only%20natural%20to%20add%20some%20roasted%20garlic%20and%20some%20tarragon%20to%20punch%20it%20up%20a%20little.%3C/p%3E%3Cp%3ERoasted%20Tomato-Garlic-Herb-Passata.%3C/p%3E%3Cp%3EAs%20you%20can%20imagine,%20the%20sauce%20was%20phenomenal,%20and%20after%20a%20rather%20frustrating%20day%20at%20the%20gym%20it%20was%20the%20win%20I%20totally%20needed.%20Since%20we%20had%20been%20in%20the%20area%20that%20morning%20I%20took%20Michael%20to%20the%20gym%20I%20belong%20to%20right%20by%20my%20office,%20and%20despite%20the%20fact%20that%20the%20brand%20mascot%20for%20the%20gym%20is%20a%20guy%20deadlifting,%20I%20found%20it%20incredibly%20difficult%20to%20do%20even%20my%20more%20normal%20deadlifting%20routine%20because%20my%20hands%20couldn%E2%80%99t%20get%20a%20good%20grip%20on%20the%20bar.%20They%20don%E2%80%99t%20allow%20chalk%20and%20the%20barbells%20are%20all%20really%20smooth,%20so%20it%20was%20nigh%20upon%20impossible%20to%20get%20above%20what%20would%20normally%20not%20be%20a%20big%20deal%20of%20a%20weight%20for%20me,%20and%20it%20was%20frustrating%20as%20fuck.%20I%20ended%20up%20doing%20a%20short%201K%20on%20the%20rower%20to%20help%20me%20feel%20more%20adequate%20about%20everything,%20and%20going%20forward%20I%E2%80%99ll%20be%20focused%20on%20lower-weight%20work%20whenever%20we%20find%20ourselves%20there%20on%20weekends.%3C/p%3E%3Cp%3EAnyway,%20this%20sauce%20became%20the%20thing%20I%20was%20most%20pleased%20about%20making%20that%20day,%20because%20it%20was%20delicious%20and%20interesting%20and%20successful,%20and%20I%20wanted%20to%20eat%20so%20much%20of%20the%20sauce%20straight%20out%20of%20the%20bowl.%20(It%20could%20be%20the%20base%20of%20a%20kickass%20soup,%20if%20you%20ask%20me.)%20We%20sauced%20the%20pie%20gently,%20and%20I%20used%20little%20mozzarella%20boccioni%20and%20some%20good%20grape%20tomatoes%20to%20make%20a%20kickass%20pizza,%20and%20it%20took%20everything%20within%20me%20not%20to%20house%20it%20after%20a%20somewhat%20killer%20workout.%3C/p%3E%3Cp%3EPizza%20with%20Roasted%20Tomato-Garlic-Herb%20Passata%20and%20Fresh%20Mozzarella%3C/p%3E%3Cp%3EMake%20the%20passata:%20preheat%20the%20oven%20to%20450%20degrees.%20Coat%20the%20tomatoes%20in%20the%20tablespoon%20of%20olive%20oil,%20then%20season%20generously%20with%20kosher%20salt%20and%20pepper.%3C/p%3E%3Cp%3EIn%20the%20meantime,%20place%20the%20garlic%20into%20a%20foil%20packet%20and%20season%20the%20cut%20garlic%20with%20a%20little%20drizzle%20of%20olive%20oil%20and%20salt%20and%20pepper;%20close%20up%20the%20packet%20and%20place%20on%20a%20lower%20rack%20to%20roast.%3C/p%3E%3Cp%3EPlace%20the%20tomatoes%20on%20a%20foil-lined%20baking%20sheet%20on%20a%20higher%20rack%20and%20let%20roast%20for%20an%20hour,%20stirring%20every%2020%20minutes.%20Remove%20both%20the%20tomatoes%20and%20the%20garlic%20from%20the%20oven%20and%20let%20cool,%20and%20then%20place%20the%20tomatoes%20in%20a%20blender%20carafe%20and%20then%20squeeze%20the%20garlic%20into%20the%20carafe;%20add%20the%20herbs%20and%20a%20little%20extra%20olive%20oil%20and%20blend%20until%20very%20smooth.%20Season%20with%20additional%20salt%20and%20pepper%20as%20needed%20and%20set%20aside.%3C/p%3E%3Cp%3EMake%20the%20pizza:%20preheat%20the%20oven%20to%20475%20to%20500,%20and%20cover%20a%20baking%20sheet%20with%20cornmeal.%20Stretch%20out%20the%20pizza%20dough%20gently%20and%20place%20on%20the%20baking%20sheet%20and%20bake%20for%205-6%20minutes%20before%20removing%20and%20adding%20the%20sauce%20and%20cheese%20and%20tomatoes%20(in%20that%20order),%20being%20light%20on%20the%20saucing%20as%20to%20not%20soak%20the%20pizza.%20Let%20bake%20for%20about%208-10%20minutes,%20or%20until%20the%20cheese%20is%20melted.%3C/p%3E%3Cp%3ERemove%20from%20the%20oven%20and%20serve%20after%20the%20pizza%20has%20rested%20for%20about%204%20minutes.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
