Receta Pizza with Arugula, Goat Cheese and Cherry Tomatoes

Ee had our “make your own pizza” night and I decided to go with some creativity. In particular, I wanted to be creative with certain flavors that Greg is not a big fan of. One of those being arugula. To my disappointment, he is not a big fan of arugula and so I don’t use it when cooking for the both of us. He also practically panics if I make anything without meat in it, and I still like to have the occasional vegetarian meal. ;)

When he suggested we make our own pizzas, I immediately got it in my head to make one with arugula. I’ve seen such pizzas on TV before and have been dying to try one. He scoffed at this, but that didn’t stop me! I did some google searching, got a few ideas, and then used my own creativity. My pizza was delicious! After the fact, even Greg had to admit it looked delicious. I was quite proud of how it turned out! The only thing that I forgot to add to it that I wish I had was fresh garlic. So I am including that in my Ingredients list. I’ll be sure to remember that the next time!

  • Pizza dough – whether you make your own or buy it… I recommend the garlic and herb dough from Trader Joe’s. It was delicious.
  • Pesto – really how much you use is up to your personal discretion. I bought a tub from TJ’s and used the whole thing.
  • 8 oz. goat cheese
  • Cherry tomatoes, sliced in half
  • Fresh arugula
  • Sea Salt
  • Pepper
  • 2 cloves garlic, minced (optional)
  • Bell Pepper (optional)
  • Minced red onion (optional)

Direcciones

  1. Preheat oven according to the directions on the pizza dough that you are using.
  2. Spread pizza dough out on an oiled baking sheet. Spread pesto onto the dough. Scatter the tomatoes over the pizza. Add the garlic, bell peppers, and/or onions if so desired. Crumble the goat cheese over all the above.
  3. Bake in the oven according to package directions, until crust is slightly browned. Take pizza out, top with arugula. I put mine back in just for about a minute or two to let the lettuce wilt. Not everyone would probably want to do it that way, I am sure.
  4. Sprinkle with some sea salt and pepper.
  5. Enjoy!
