Ingredientes

  • 2 c. Flour
  • 1/4 c. Sugar
  • 1/2 tsp Salt
  • 1/2 tsp Baking soda
  • 2 tsp Baking pwdr
  • 2 x Large eggs
  • 1 c. Buttermilk
  • 1/2 c. Vegetable oil

Direcciones

  1. Mix dry ingredients. Beat Large eggs with buttermilk and oil. Add in to dry ingredients. Mix, leaving mix slightly lumpy. Fill well-greased muffin tins two-thirds full. Bake at 425 degrees F. for 15-20 min, or possibly till brown. (Overmixing makes tough muffins.) VARIATIONS:
  2. Blueberry: Mix in 1 c. fresh blueberries you have tossed with 1 Tbsp. flour and 1 tsp. grated orange or possibly lemon rind (opt.). Bran: Add in 3/4 c. Nabisco All-Bran cereal (for Raisin Bran, add 1/2 c. raisins). Cinnamon-Apple: Add in 3/4 c. finely minced apples. Mix 2 Tbsp. sugar and 1/2 tsp. cinnamon and sprinkle on top of each muffin before baking.
