- Plantains can be bought at Oriental market. They are dark when ripe, and soft. Peel, then cut the plantains and fry them till brown but don't burn. Dispose of the oil and add in water, sugar and cloves. Cover the pan, lower the heat and cook till the sugar gets sticky.
