%20a%20waffle%20snob.%20I%20grew%20up%20on%20Bisquick%20waffles%20and%20loved%20them.%20But%20you%20see%20how%20thick%20this%20is?%20This%20is%20my%20idea%20of%20a%20perfect%20waffle.%3C/p%3E%3Cp%3EWe%20have%20a%20good%20breakfast%20place%20in%20town;%20its%20specialities%20are%20pancakes%20and%20it%20does%20great%20French%20toast.%20However,%20their%20waffles%20are%20terrible.%20They%20are%20dense%20and%20heavy%E2%80%93not%20at%20all%20what%20I%20want%20in%20a%20waffle.%20Add%20to%20that%20my%20mom%20packed%20her%20waffle%20iron%20away%20while%20her%20kutchen%20was%20remodeled%20this%20last%20year,%20and%20I%20have%20been%20waffle%20deprived.%20I%20used%20to%20own%20a%20waffle%20iron,%20but%20John%20is%20not%20a%20lazy%20weekend%20brunch%20kind%20of%20guy%20(one%20of%20his%20few%20flaws),%20and%20it%20got%20lost%20in%20one%20of%20our%20moves.%20But%20since%20then%20I%E2%80%99ve%20had%20kids,%20and%20they%20love%20breakfast%20like%20me.%20So%20when%20I%20saw%20Williams%20and%20Sonoma%20was%20running%20a%20rebate%20special%20on%20their%20All%20Clad%20waffle%20irons,%20I%20started%20paying%20attention%20and%20counting%20up%20Williams%20and%20Sonoma%20gift%20cards%20(we%20get%20them%20as%20cash%20back%20from%20our%20credit%20card%20company).%3C/p%3E%3Cp%3ENow%20I%20do%20not%20work%20for%20All%20Clad%20or%20Williams%20and%20Sonoma,%20nor%20have%20I%20ever%20spoken%20to%20them%20about%20writing%20on%20my%20blog.%20But%20I%20do%20love%20them%20both%20(when%20I%20can%20afford%20them),%20and%20I%20am%20so%20excited%20about%20this%20appliance%E2%80%93and%20they%20are%20running%20the%20special%20for%20a%20few%20more%20days%20still%E2%80%93so%20I%20thought%20I%20would%20review%20it.%20I%20chose%20the%204%20square%20waffle%20iron;%20I%20knew%20I%20wanted%20the%20deeper%20Belgian%20style,%20so%20the%20round%20was%20out,%20and%20I%20just%20cannot%20see%20the%20point%20in%20the%202%20square.%20Maybe%20if%20we%20were%20a%202%20person%20household,%20but%20we%E2%80%99re%20not,%20we%E2%80%99re%204%20(even%20if%20not%E2%80%93who%20eats%20only%20one%20square,%20really?).%20Breakfast%20makes%20me%20feel%20like%20enough%20of%20a%20short%20order%20cook%20without%20adding%20more%20repetitions%20to%20the%20process.%20Being%20All%20Clad,%20the%20waffle%20maker%20is%20pricey,%20but%20it%20got%20fabulous%20reviews,%20I%20had%20the%20gift%20cards,%20and%20until%20May%2015%20they%20are%20running%20a%20rebate%20special.%20For%20example,%20for%20the%204%20square%20iron,%20you%20get%20a%20$50%20Williams%20and%20Sonoma%20gift%20card.%3C/p%3E%3Cp%3EThe%20first%20recipe%20I%20chose%20was%20the%20Buttermilk%20Waffles%20recipe%20included%20with%20the%20iron.%20As%20far%20as%20the%20waffle%20maker%20goes,%20it%20all%20went%20perfectly.%20It%20beeped%20when%20they%20were%20ready%20(edited%20to%20add:%20it%20beeps%20when%20it%20comes%20back%20to%20temperature,%20but%20so%20far%20[2%20different%20sets%20of%20waffles;%202%20different%20recipes]%20when%20it%20comes%20back%20to%20temp%20is%20when%20the%20waffles%20are%20ready.%20So%20you%20may%20need%20to%20use%20a%20timer%20but%20thus%20far%20I%20have%20not),%20it%20did%20not%20make%20a%20mess%20(what%20spillover%20there%20was%20went%20right%20into%20the%20drip%20tray%20perfectly),%20and%20it%20made%20gorgeous%20waffles.%20As%20for%20the%20recipe,%20texturally%20it%20was%20perfect.%20It%20is%20a%20brunch%20(or%20breakfast%20for%20dinner,%20which%20is%20what%20we%20did)%20kind%20of%20recipe%20as%20it%20does%20require%20whipping%20the%20egg%20whites%20separately.%20I%E2%80%99d%20give%20it%20an%20A-,%20because%20while%20I%20swooned%20with%20every%20bite,%20it%20was%20just%20a%20tad%20too%20eggy%20for%20my%20tastes.%20I%20realize%20that%20sounded%20contradictory,%20but%20I%20love%20waffles,%20and%20I%20especially%20love%20waffles%20that%20are%20light,%20crispy%20on%20the%20outside%20and%20melting%20on%20the%20inside.%20And%20these%20were.%20I%20used%20farmer%E2%80%99s%20market%20eggs,%20which%20can%20be%20kinda%20big,%20so%20it%20is%20possible%20I%20used%20too%20big%20of%20eggs%20also.%20Because%20of%20that%20I%20will%20probably%20give%20this%20recipe%20another%20try%20with%20smaller%20eggs.%3C/p%3E%3Cp%3EAll%20Clad%20Buttermilk%20Waffles%3C/p%3E%3Cp%3Efrom%20the%20All%20Clad%20recipe%20booklet%20accompanying%20waffle%20iron%3C/p%3E%3Cp%3E(I%20am%20only%20including%20the%20directions%20for%20the%20batter;%20proceed%20as%20you%20would%20for%20your%20waffle%20iron.)%3C/p%3E%3Cp%3ESift%20the%20flour,%20baking%20powder,%20baking%20soda,%20salt%20and%20sugar%20together%20into%20a%20bowl.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20whisk%20together%20the%20egg%20yolks,%20butter%20(cooled%20slightly),%20buttermilk%20and%20vanilla.%20Stir%20the%20flour%20mixture%20into%20this.%3C/p%3E%3Cp%3EWhip%20the%20egg%20whites%20until%20stiff,%20but%20not%20dry.%20Fold%201%20cup%20of%20the%20egg%20whites%20into%20the%20batter;%20then%20fold%20in%20the%20rest%20of%20the%20egg%20whites.%20Proceed%20according%20to%20
