Receta Poached Eggs And.....
What a challenge to name this recipe, each one I thought of was too long. One recent Saturday while planning the menu, Babe and I thought of an egg dish for dinner one night. I'm not good breaking or cooking eggs unless the recipe calls for whisked eggs. That's why I bought Eggy (see picture). All I have to do is follow the instructions for the type of eggs we want and remove them once the buzzer sounds. Now, I have to master removing poached eggs without breaking them. (Yes, I do slightly oil the bottom of the egg compartment of the poaching tool.)
Ingredientes
- 4 eggs / 2 per person / poached
- 2 bell peppers / colors of your choice (I used red and yellow) / chopped
- 1 can of garbanzo beans drained and rinsed
- 1 small onion / diced / next time I'll use a purple onion
- 8 oz spinach / wilted
- half a pint or so of grape tomatoes / halved
- 2 Tbs EVOO
- half tsp garlic powder
- half tsp ground black pepper
- half tsp Himalayan pink salt
Direcciones
- Heat oven to 400.
- While oven is heating, coat bottom of oven proof pan with 1 Tbs of EVOO.
- Prep the beans, onion, peppers and tomatoes as described and place in a mixing bowl. Add 1 Tbs of EVOO and thoroughly mix to coat ingredients. Add the garlic powder, black pepper and salt, mix to coat. Spread the contents on the oven pan. Place on middle rack.
- Check around 15 minutes. My oven, at our altitude, produces a hearty roast about the 20 minute mark.
- While roasting, rinse the spinach, shake off some of the water, and place in sauté pan with cover on. Use enough flame to wilt the spinach.

- Plate the wilted spinach first followed by the roasted goodies topped with the poached eggs.
