Ingredientes

  • 100 gm caster sugar
  • 500 ml water
  •     the pared rind of a small lemon
  • 3 x lumps of preserved ginger minced
  • 1 x vanilla pod
  • 4 x star fruit thickly sliced
  •     best quality vanilla ice cream

Direcciones

  1. Put the sugar and water in a heavy bottomed pan and bring slowly to the boil with the lemon ginger and vanilla pod.
  2. When the sugar has dissolved add in the sliced star fruit and turn down the heat to a gentle simmer. Cook till the fruit is tender about 15 min depending on the ripeness of the fruit.
  3. Leave to cold slightly before spooning into a suitable serving dish.
  4. Serve hot rather than warm with balls of vanilla ice cream.
  5. Serves 4
