- Put the sugar and water in a heavy bottomed pan and bring slowly to the boil with the lemon ginger and vanilla pod.
- When the sugar has dissolved add in the sliced star fruit and turn down the heat to a gentle simmer. Cook till the fruit is tender about 15 min depending on the ripeness of the fruit.
- Leave to cold slightly before spooning into a suitable serving dish.
- Serve hot rather than warm with balls of vanilla ice cream.
