I have a very long and overdue post that pays tribute to the Pomegranate. A year ago, the lovely folks at Pom Wonderful contacted me and asked if I'd like to try some of their 100% pure pomegranate juice. No sooner did I respond "yes, please" than UPS delivered six bottles of their 8 ounce juice. I admit that, at first taste, I wasn't as smitten with the flavor of the juice straight out of the bottle. On the other hand, I did mix up a POM Cosmo for a dinner party. We liked it! Hidden in the back of my new (and very large) refrigerator, three remaining bottles were forgotten. (Ahem. %20refrigerator,%20three%20remaining%20bottles%20were%20forgotten.%20%20(Ahem.%20%20I%20apologize,%20POM%20Wonderful,%20for%20my%20bad%20manners.)%20Months%20ago,%20I%20saw%20a%20photo%20of%20Pomegranate%20Molasses.%20%20I%20was%20intrigued%20enough%20to%20bookmark%20Alton%20Brown's%20recipe%20and%20life%20got%20in%20the%20way...%3C/p%3E%3Cp%3E4%20cups%20of%20Pomegranate%20juice,%201/2%20cup%20sugar%20and%201%20tablespoon%20of%20freshly%20lemon.%20%20That's%20it!%3C/p%3E%3Cp%3EPlace%20the%20pomegranate%20juice,%20sugar%20and%20lemon%20juice%20in%20a%204-quart%20saucepan%20set%20over%20medium%20heat.%20Cook,%20stirring%20occasionally,%20until%20the%20sugar%20has%20completely%20dissolved.%20%20This%20is%20where%20patience%20comes%20in.%20%20The%20liquid%20needs%20to%20be%20reduced%20for%20at%20least%20%20on%20medium-low%20heat.%20%20The%20recipe%20said%2070%20minutes,%20but%20I%20suspect%20it%20varies%20because%20mine%20took%20about%2090%20minutes.%3C/p%3E%3Cp%3ETIP:%20To%20a%20wooden%20spoon,%20I%20add%20a%20rubber%20band%20to%20the%20top%20of%20where%20the%20liquid%20level%20begins.%20This%20way,%20I%20can%20visually%20determine%20how%20much%20the%20liquid%20has%20reduced.%20%20(I%20do%20this,%20often,%20when%20I%20am%20making%20a%20pan%20reduction%20sauce.)%20%20Since%20I%20am%20starting%20with%20four%20cups%20of%20liquid,%20I%20know%20that%20I%20three%20cups%20of%20liquid%20needs%20to%20evaporate.%20%20Once%20again,%20be%20patient!%20%2090%20minutes%20later,%20the%20liquid%20has%20become%20thick%20and%20syrupy.%20%20I%20like%20to%20freeze%20a%20spoon,%20to%20test%20how%20thick%20a%20liquid%20has%20reduced%20(an%20old%20jam%20%22canning%22%20technique).%20%20The%20color%20look%20like%20liquid%20rubies!%3C/p%3E%3Cp%3EThe%20heat%20is%20turned%20off%20and%20I%20let%20the%20syrup%20sit%20in%20the%20pot%20for%2030%20minutes.%20%20As%20you%20can%20see%20(photo%20below,%20top%20left),%20the%20syrup%20has%20begun%20to%20%22set%22.%20%20Using%20a%20sterile%20and%20clean%20canning%20jar,%20I%20begin%20to%20pour%20the%20pomegranate%20molasses...%3C/p%3E%3Cp%3EThis%20is%20such%20a%20beautiful%20color!%20%20I'm%20so%20pleased%20with%20the%20thickness%20of%20the%20molasses.%20%20It's%20that%20easy!%3C/p%3E%3Cp%3EThis%20will%20store%20in%20the%20refrigerator%20for%20up%20to%20six%20months.%3C/p%3E%3Cp%3EVERDICT:%20%20At%20firs%20taste,%20the%20molasses%20makes%20me%20pucker%20a%20bit%20(I%20am%20very%20sensitive%20to%20sour%20taste%20anyway).%20%20This%20is%20not%20an%20unappealing%20kind%20of%20tart,%20though.%20%20%20It's%20a%20very%20rich%20and%20very%20concentrated%20flavor%20of%20pomegranates.%20%20I%20actually%20liked%20it!%3C/p%3E%3Cp%3EI%20am%20smitten%20with%20the%20beautiful%20red%20color!%3C/p%3E%3Cp%3ESo,%20what%20does%20one%20do%20with%20pomegranate%20molasses?%20%20It%20makes%20a%20beautiful%20glaze.%20%20I've%20seen%20dessert%20recipes%20and%20savory%20recipes.%20%20On%20my%20next%20post,%20I'm%20going%20to%20show%20you%20how%20I%20took%20Brussel%20sprouts%20to%20a%20new%20height.%20%20I'm%20pretty%20confident%20I'm%20going%20to%20turn%20non-Brussel%20sprout%20lovers%20into%20believers%20that%20Pomegranate%20molasses%20(and%20a%20few%20other%20lovely%20ingredients)%20will%20have%20you%20spooning%20seconds%20on%20your%20dinner%20plate.%3C/p%3E%3Cp%3EYou%20will%20want%20to%20make%20this%20dish.%20%20I'm%20that%20confident.%20%20So,%20hurry!%20Buy%20some%20POM%20Wonderful%20juice%20and%20make%20this%20molasses.%20It%20will%20rock%20your%20Brussel%20Sprout%20World,%20as%20you've%20known%20it.%20%20It%20rocked%20mine.%20I'm%20a%20changed%20woman.%20Come%20to%20think%20of%20it,%20I'm%20starting%20to%20see%20Pomegranates%20as%20the%20new%20sexy%20food.%20%20There%20are%20so%20many%20recipe%20possibilties%20to%20come.%20(I'd%20love%20to%20have%20%20a%20lipstick%20that%20color...or%20toe%20polish.%20%20Never%20mind.%20%20It's%20post-turkey%20tryptophan!)%3C/p%3E%3Cp%3EThank%20you,%20POM%20Wonderful.%20%20I%20really%20do%20appreciate%20your%20product%20and%20I'm%20a%20believer%20in%20the%20health%20benefits%20and%20I'm%20plotting%20to%20try%20new%20recipes,%20from%20your%20website.%20%20(Psssst,%20I'd%20sure%20love%20one%20of%20those%20aprons.%20They%20are%20hilarious!)%3C/p%3E%3Cp%3EDisclaimer:%20While%20POM%20Wonderful%20provided%20me%20with%20FREE%20pomegranate%20juice,%20have%20received%20no%20monetary%20compensation%20for%20my%20recipe%20or%20review.%3C/p%3E){kind=link}
