Ingredientes

  • 1 x whole small pig (cleaned and aprox 10 kilos)
  • 10 x cloves of garlic
  • 1 Tbsp. black pepper
  • 5 x fresh sage leaves
  • 1/2 Tbsp. Rosemary
  • 2 c. Cachaca
  • 2 c. white vinegar
  • 10 Tbsp. salt
  • 1 x few drops of warm sauce

Direcciones

  1. Pre-heat oven to 180 degrees Celcius
  2. Place the pig in a roasting panBlend all of the ingredients together till the mix is a paste like consistency.
  3. Spread the mix all over the pigLet stand for 20 min.
  4. Place the pan in the oven and cook for 3 hrs.
  5. The Plate:Place the roasted pig on a serving platter and garnish with tomato and apple slices.
