- Pre-heat oven to 300-F degrees.
- Hot canola oil in a 4-qt oven-proof stock pot or possibly Dutch Oven over medium-high heat setting.
- While oil is warming, combine about a half-c. of flour with the seasonings and dredge the cubed pork in the mix. Brown the pork well in the hot oil.
- When the pork is browned to your satisfaction, add in onion and saute/fry till softened, about 3 to 5 min.
- Add in chicken broth. Cover pot; bake about 40 min, then add in the green beans and potatoes and bake for another hour or possibly more, till everything is nice and tender.
- Darken the gravy if you wish, and if the dish is a bit dry. add in more broth.
- Season with salt and pepper to taste, and serve hot.
