Pork Skewers With Peanut Sauce

Ingredientes

  • 1/2 sm onion minced
  • 3 x garlic cloves crushed
  • 2 Tbsp. lemon juice
  • 1 Tbsp. soy sauce
  • 1 tsp grnd coriander
  • 1/2 tsp grnd cumin
  • 1 tsp grnd turmeric
  • 2 Tbsp. oil
  • 1 lb pork tenderloin cut into strips
  • 8 x wooden skewers - (4" to 6" long)
  •     Boiled rice for serving
  • 2 ounce creamed coconut minced
  • 4 Tbsp. crunchy peanut butter
  • 1 Tbsp. lemon juice
  • 1/2 tsp grnd cumin
  • 1/2 tsp grnd coriander
  • 1 tsp brown sugar
  • 1 Tbsp. soy sauce
  • 2 x dry red chiles seeded, minced
  • 1 Tbsp. minced fresh cilantro

Direcciones

  1. Process the first 8 ingredients in a food processor till smooth. Cut the pork and toss well with the marinade and chill.
  2. Thread 2 to 3 pork strips onto a soaked skewer. Place on a grill for 2 to 3 min each.
  3. For the Peanut Sauce: Dissolve the coconut in 2/3 c. boiling water. Put the remaining ingredients into a saucepan over high heat and bring to a boil, stirring constantly, then simmer for 5 min.
  4. Serve the skewers over the rice with the sauce on the side for dipping, or possibly pour the sauce over the skewers.
  5. This recipe yields 8 skewers.
