Receta Pork Skewers With Peanut Sauce

- Process the first 8 ingredients in a food processor till smooth. Cut the pork and toss well with the marinade and chill.
- Thread 2 to 3 pork strips onto a soaked skewer. Place on a grill for 2 to 3 min each.
- For the Peanut Sauce: Dissolve the coconut in 2/3 c. boiling water. Put the remaining ingredients into a saucepan over high heat and bring to a boil, stirring constantly, then simmer for 5 min.
- Serve the skewers over the rice with the sauce on the side for dipping, or possibly pour the sauce over the skewers.
- This recipe yields 8 skewers.
