%3C/p%3E%3Cp%3EAnyways,%20you%20get%20the%20idea.%20In%20the%20food%20world,%20pork%20might%20not%20be%20the%20hottest%20topic,%20but%20I%20think%20its%20more%20versatile%20than%20any%20other%20meat%20group%20that%20I%20know%20of.%3C/p%3E%3Cp%3EAnd%20that%20brings%20me%20to%20this%20delicious%20dish...Pork%20Tenderloin%20with%20Jalapeno%20Paste.%20It's%20been%20a%20family%20favorite%20for%20several%20years.%20As%20a%20matter%20of%20fact,%20when%20my%20daughter%20decided%20to%20go%20porkless,%20this%20was%20the%20one%20dish%20that%20she%20was%20sad%20about%20not%20getting%20to%20eat.%3C/p%3E%3Cp%3EI%20found%20the%20recipe%20in%20Everyday%20Food%20and%20have%20only%20made%20a%20couple%20very%20minor%20changes.%20It's%20a%20%22grill%22%20recipe%20but...(ssshhhhh,%20don't%20tell%20Sir%20Sportsalot)%20I%20got%20tired%20of%20it%20coming%20out%20dry%20and%20charred.%20Bless%20his%20heart...I%20mean,%20he%20thinks%20he%20likes%20to%20BBQ,%20but%20he's%20not%20the%20type%20that's%20going%20to%20sit%20out%20there%20and%20work%20the%20grill.%20He%20looks%20at%20the%20clock...and%20runs%20inside%20the%20house%20to%20watch%20his%20sports%20and%20in%207%20minutes%20will%20run%20back%20out%20to%20flip%20the%20meat.%20Meanwhile,%20how%20many%20flare-ups%20did%20he%20miss?%20Soooo,%20what's%20my%20point?%20I%20make%20this%20in%20the%20oven%20now.%3C/p%3E%3Cp%3EI%20start%20out%20with%201%20pork%20tenderloin.%20The%20recipe%20calls%20for%202....but%20I%20like%20lots%20of%20Jalapeno%20Paste....I%20dunno..you%20be%20the%20judge.%3C/p%3E%3Cp%3EFor%20the%20Jalapeno%20Paste%20get%20out:%3C/p%3E%3Cp%3EI%20like%20the%20jarred%20%22Nacho%20Jalapenos%22.%20Especially%20for%20this%20recipe.%20They%20seem%20to%20blend%20down%20really%20well%20and%20stick%20to%20the%20meat.%20Sooo....when%20you're%20dealing%20with%20pre-sliced%20jalapenos,%20how%20do%20know%20when%20you%20have%20enough%20to%20equal%20a%20whole?%3C/p%3E%3Cp%3EWhy......you%20stack%20'em%20up%20and%20put%20it%20back%20together%3C/p%3E%3Cp%3EYep.....that%20looks%20like%20it's%20about%20the%20size%20of%20whole%20one,%20dontcha%20think?%3C/p%3E%3Cp%3EIn%20a%20food%20processor%20(and%20this%20is%20when%20I%20really%20really%20love%20my%20mini%20food%20processor)%20combine%20all%20your%20paste%20ingredients%3C/p%3E%3Cp%3Eand%20process%20until%20smooth......for%20about...I%20dunno...a%20minute?%3C/p%3E%3Cp%3EThe%20aroma%20is%20amazing!!%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20400'%20F%3C/p%3E%3Cp%3EI%20got%20out%20my%20heavy%20cast%20iron%20skillet%20and%20heated%20up%20a%20little%20oil%20in%20there.%20Covered%20the%20tenderloin%20with%20half%20of%20the%20paste%20and%20seared%20this%20little%20piggy%20in%20my%20very%20hot%20skillet.%3C/p%3E%3Cp%3EThe%20reason%20I'm%20using%20my%20skillet%20is%20because%20this%20baby%20is%20goin%20in%20the%20oven%20soon.%20But%20not%20yet...%3C/p%3E%3Cp%3EGet%20it%20all%20nicely%20seared%20all%20around....then%20cover%20the%20top%20with%20the%20remaining%20jalapeno%20paste%3C/p%3E%3Cp%3EStick%20in%20a%20meat%20thermometer%20(if%20thats%20the%20way%20you%20roll)%20and%20plop%20this%20little%20fatty%20in%20your%20400'%20oven%20for%20about%2025%20-%2030%20minutes,%20or%20until%20your%20thermometer%20reads%20160'%3C/p%3E%3Cp%3ERemove%20the%20meat%20to%20a%20warming%20platter,%20cover%20with%20foil%20and%20let%20it%20rest%20for%20about%2010%20minutes%3C/p%3E%3Cp%3ETake%20that%20skillet%20with%20all%20those%20juices%20in%20there....remove%20all%20but%202%20tablespoons%20of%20fat..errrr,%20juice%20from%20the%20pan.%20Put%20over%20a%20medium%20heat,%20and%20add%20about%202%20tablespoons%20of%20flour....stir.%20Continue%20stirring%20until%20it's%20well%20combined...about%20a%20minute%20or%20so....let%20the%20flour%20get%20good%20and%20brown.%20Pour%20in%202%20cups%20of%20chicken%20broth%20while%20stirring%20and%20stirring%20and%20stirring%20some%20more,%20until%20you're%20gravy%20is%20made.%20If%20necessary,%20season%20with%20a%20little%20salt%20and%20pepper.%3C/p%3E%3Cp%3EI%20didn't%20want%20to%20keep%20those%20little%20blackened%20bits%20in%20my%20gravy%20so%20I%20strained%20them%20out%20before%20I%20served%20it.%3C/p%3E%3Cp%3EBut%20look%20how%20nice%20and%20juicy%20this%20tenderloin%20is%3C/p%3E%3Cp%3EPour%20some%20gravy%20over%20it%20and%20enjoy%20with%20a%20nice%20side%20of%20stuffing%20and%20steamed%20asparagus.%3C/p%3E%3Cp%3EAnd%20poor%20Jacquie%20didn't%20get%20any%20cuz%20this%20little%20piggy%20had%20none.%3C/p%3E){kind=link}
