%20which%20we%20had%20on%20the%20side.%20These%20were%20delicious,%20light%20and%20filling...and%20can%20be%20adapted%20in%20so%20many%20ways%20for%20future%20meals.%3C/p%3E%3Cp%3EI%20don't%20have%20pics,%20but%20trust%20me-%20they're%20beautiful!%20I%20will%20try%20to%20have%20some%20next%20time!%20(EDIT-%20I%20made%20them%20again%20the%20other%20night,%20see%20above).%3C/p%3E%3Cp%3EWhat%20you'll%20need:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20at%20350%20(F).%3C/p%3E%3Cp%3EIn%20a%20bowl,%20mix%20the%20olive%20oil,%20balsamic,%20salt,%20pepper,%20and%20spices%20in%20a%20bowl.%20You'll%20notice%20that%20I%20didn't%20put%20measurements%20here,%20I%20will%20get%20better%20at%20this%20I%20promise!%20I%20do%20everything%20by%20eye,%20but%20from%20what%20I%20can%20deduce%20I%20used%20about%201/2%20a%20cup%20of%20olive%20oil,%201/2%20a%20cup%20of%20balsamic,%201tsp%20of%20salt,%201/2%20tsp%20pepper,%202%20tsps%20of%20garlic%20and%201%20tsp%20of%20italian%20spice%20mix.%20Whisk%20it%20all%20together%20and%20taste,%20you%20want%20it%20to%20taste%20smooth,%20not%20too%20vinegar-y,%20and%20well-seasoned%20(no%20one%20spice%20outweighs%20the%20other-%20although%20most%20people%20will%20taste%20the%20garlic%20the%20most%20since%20it's%20so%20strong).%3C/p%3E%3Cp%3EIn%20a%20flat%20dish%20(think%20a%20lasagna%20platter),%20lay%20the%20mushrooms%20(cleaned%20and%20without%20stems)%20with%20the%20caps%20down.%20Spoon%20the%20dressing%20into%20the%20caps.%20Place%20into%20the%20oven%20for%208-10%20mins%20or%20until%20they%20have%20shrunk%20enough.%3C/p%3E%3Cp%3ERemove%20the%20dish%20and%20flip%20the%20mushrooms.%20From%20there,%20just%20drizzle%20balsamic%20on%20the%20top%20and%20in%20the%20bottom%20of%20the%20dish.%20Place%20back%20in%20the%20oven%20another%207%20minutes%20and%20let%20brown.%3C/p%3E%3Cp%3EWhile%20the%20mushrooms%20are%20browning,%20cut%20the%20goat%20cheese.%20You%20will%20know%20how%20much%20you%20need%20for%20each%20cap%20based%20on%20the%20size%20of%20the%20mushroom.%3C/p%3E%3Cp%3ERemove%20the%20flat%20dish%20and%20you%20can%20either%20re-flip%20the%20mushrooms%20or%20lay%20them%20on%20a%20flat%20baking%20sheet.%20Either%20way,%20you%20will%20need%20to%20drain%20the%20juice%20from%20the%20dish%20back%20into%20your%20dressing%20bowl%20(as%20topping%20and/or%20salad%20dressing).%20Place%20the%20goat%20cheese%20on%20them.%20About%2010%20minutes%20before%20you're%20about%20to%20sit%20at%20the%20table,%20set%20the%20oven%20to%20High%20Broil%20and%20place%20the%20dish%20back%20in.%20In%20about%208%20minutes,%20the%20cheese%20will%20be%20golden%20brown.%20Drizzle%20a%20little%20of%20the%20dressing%20on%20the%20cheese.%3C/p%3E%3Cp%3EAnd,%20in%2020%20minutes%20an%20AMAZING%20meal!%20Savoury%20and%20healthy.%3C/p%3E%3Cp%3EI%20placed%20these%20on%20a%20spinach%20salad%20with%20tomatoes%20and%20orange%20peppers%20with%20the%20leftover%20sauce%20as%20vinaigrette.%20You%20could%20serve%20them%20on%20cubed%20tomatoes%20as%20a%20light%20entree,%20or%20even%20on%20their%20own%20as%20a%20side.%3C/p%3E){kind=link}
