Ingredientes
- For posole:
- 2 tablespoons extra virgin olive oil
- 2 1/2 to 3 pound pork shoulder, cut into 1 inch pieces
- 1 large yellow onion, chopped
- 6 cloves garlic, minced
- 1 tablespoon dried oregano
- 3 tablespoons chili powder
- 1 tablespoon ground cumin
- 6 cups chicken stock
- 2 15-ounce cans hominy, drained and rinsed
- 1 1/2 teaspoons salt
- 3/4 teaspoon black pepper
- For garnish:
- 1 avocado, cut into 1/2 inch cubes
- 1/4 white cabbage, thinly sliced
- 4 to 5 large radishes, thinly sliced
- 1/2 cup cilantro, roughly chopped
- 1/4 cup shredded carrot
- 1/2 cup sliced scallions
