%20ramen,%20I%20even%20made%20it%20myself!%20And,%20because%20it%20happened%20between%20then%20and%20now,%20even%20though%20it%20didn%E2%80%99t%20technically%20happen%20in%202014,%20I%20am%20counting%20it%20%E2%80%93%20I%20ran%20a%20half%20marathon!%20I%20didn%E2%80%99t%20think%20I%20could%20do%20it,%20but%20I%20did,%20and%20it%20was%20awesome,%20and%20I%E2%80%99ll%20do%20it%20again.%20I%20have%20a%20couple%20black%20toenails%20to%20show%20for%20it,%20and%20there%20were%20a%20few%20days%20there%20where%20the%20walking%20was%20not%20so%20great,%20but%20I%20did%20it.%20I%20ran%2013%20miles.%20And%20I%20kind%20of%20enjoyed%20it.%20And%20I%20think%20I%20might%20do%20it%20again%E2%80%A6%3C/p%3E%3Cp%3EWhich%20brings%20me%20to%20the%20big%20news%E2%80%A6who%20has%20two%20thumbs%20and%20no%20more%20boring%20office%20job?%20This%20cook!%20That%E2%80%99s%20right%20folks,%20I%E2%80%99m%20taking%20this%20show%20on%20the%20road%20(literally,%20actually,%20as%20I%20am%20also%20moving%20out%20of%20my%20apartment%20and%20buying%20a%20car.)%20B&G%20is%20now%20available%20full%20time%20for%20all%20your%20cooking%20needs!%20%20There%E2%80%99s%20lots%20of%20stuff%20going%20on%20around%20here%20and%20I%20could%20not%20be%20more%20excited.%20Keep%20your%20eye%20on%20this%20spot%20for%20updates.%20Big%20things%20are%20coming%20soon!%3C/p%3E%3Cp%3EWhat%20I%E2%80%99m%20reading:%20The%20Empathy%20Exams%20by%20Leslie%20Jamison%20and%20A%20Girl%20and%20Her%20Pig%20by%20April%20Bloomfield.%3C/p%3E%3Cp%3EWhat%20I%20am%20listening%20to:%20Taylor%20Swift%20%E2%80%93%201989,%20The%20Best%20of%20Elvis%20Costello%20%E2%80%93%20The%20First%2010%20Years,%20and%20lots%20of%20podcasts.%3C/p%3E%3Cp%3EI%E2%80%99ve%20missed%20you%20all%20so!%3C/p%3E%3Cp%3EHeat%20two%20tablespoons%20of%20canola%20oil%20in%20a%20large%20dutch%20oven%20or%20heavy%20high-sided%20pot%20over%20medium%20high%20heat.%20Generously%20salt%20and%20pepper%20the%20roast%20and%20brown%20on%20all%20sides%20until%20caramelized,%204-5%20minutes%20on%20each%20side.%20Remove%20the%20roast%20to%20a%20plate%20and%20set%20aside.%3C/p%3E%3Cp%3EIf%20the%20bottom%20of%20the%20pot%20looks%20dry,%20add%20another%20tablespoon%20of%20the%20oil,%20and%20then%20add%20the%20sliced%20onions%20and%20garlic%20and%20cook,%20stirring%20frequently,%20until%20the%20vegetables%20are%20soft%20and%20starting%20to%20brown.%20If%20they%20are%20browning%20too%20quickly,%20reduce%20the%20heat%20a%20bit%20and%20continue%20stirring.%20Add%20the%20anchovy%20and%20tomato%20pastes%20and%20stir,%20caramelizing%20them%20a%20bit%20until%20they%20are%20fragrant.%3C/p%3E%3Cp%3EWhen%20the%20onions,%20garlic,%20tomato%20and%20anchovy%20are%20caramelized,%20add%20the%20diced%20tomatoes,%20soy%20sauce,%20red%20wine%20and%20beef%20broth%20and%20stir%20to%20combine.%20Add%20the%20beef%20back%20to%20the%20pot,%20bring%20to%20a%20boil,%20then%20reduce%20heat.%20The%20liquid%20should%20be%20at%20a%20low%20simmer.%20Cover%20the%20pot%20and%20let%20cook%20for%20two%20to%20two%20and%20a%20half%20hours,%20until%20the%20meat%20is%20tender%20and%20the%20liquid%20has%20thickened%20a%20bit.%20Add%20the%20carrots%20and/or%20parsnips,%20and%20the%20second%20half%20of%20the%20onion%20for%20the%20last%20half%20hour%20of%20cooking.%20Taste%20for%20salt%20and%20pepper%20and%20add%20as%20needed!%3C/p%3E%3Cp%3EI%20recommend%20serving%20these%20over%20mashed%20potatoes%20that%20you%E2%80%99ve%20added%20a%20tablespoon%20of%20miso%20to%20(trust,%20they%E2%80%99re%20delicious)%20and%20a%20delicious%20green%20vegetable%20of%20your%20choosing.%20(And%20then%20maybe%20stick%20some%20leftovers%20in%20a%20grilled%20cheese.)%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
