%20and%20.%20.%20.%20stay%20with%20me%20here%20.%20.%20.%20%201%20inch%20of%20a%20vanilla%20pod%20which%20I%20split%20and%20scraped.%20%20%20I%20know%20.%20.%20.%20it%20seems%20a%20stretch,%20but%20trust%20me%20on%20this%20.%20.%20.%3C/p%3E%3Cp%3EI%20mixed%20together%20some%20grated%20ginger,%20lemon%20zest,%20%20cinnamon%20and%20some%20seasoning.%20I%20then%20rubbed%20this%20all%20over%20the%20outside%20of%20the%20chicken%20and%20as%20inside%20as%20I%20could%20get.%20%20I%20set%20it%20on%20top%20of%20all%20of%20the%20aromatics%20and%20fruit%20in%20the%20bottom%20of%20the%20roaster%20and%20grated%20just%20a%20touch%20of%20vanilla%20over%20the%20top%20.%20.%20.%20%20just%20a%20touch%20mind%20.%20.%20.%20and%20then%20I%20poured%20a%20whole%20bottle%20of%20%20Stella%20Artois%20Cidre%20Raspberry%20around%20it%20in%20the%20bottom%20of%20the%20pan.%3C/p%3E%3Cp%3EI%20covered%20it%20tightly%20and%20then%20slowly%20roasted%20it%20in%20the%20oven%20until%20the%20chicken%20was%20meltingly%20tender%20.%20.%20.%20%20and%20the%20pan%20juices%20had%20reduced.%20%20%20I%20removed%20and%20discarded%20the%20vanilla%20pod%20and%20cinnamon%20stick,%20along%20with%20the%20bay%20leaf.%20%20The%20pan%20juices%20were%20mashed%20with%20my%20potato%20masher%20and%20I%20added%20chicken%20stock%20and%20enough%20cream%20to%20make%20a%20sauce,%20heating%20it%20through.%3C/p%3E%3Cp%3ETHIS%20WAS%20TOTALLY%20FABULOUS!%20%20BEST%20POT%20ROASTED%20CHICKEN%20I%20HAVE%20EVER%20EATEN!%3C/p%3E%3Cp%3EI%20kid%20you%20not!%20%20We%20all%20loved%20it%20and%20judged%20it%20the%20best%20ever%20chicken%20dish%20I%20have%20cooked%20to%20date!%20%20Who%20knew%20that%20something%20which%20sounded%20so%20odd%20could%20turn%20out%20so%20wonderful!%20%20Sometimes%20I%20surprise%20even%20myself.%3C/p%3E%3Cp%3E*Pot%20Roasted%20Chicken%20with%20Raspberry%20Cider*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EIf%3C/p%3E%3Cp%3Eyou%20like%20chicken%20which%20is%20meltingly%20tender,%20accompanied%20by%20gorgeous%20pan%3C/p%3E%3Cp%3Ejuices,%20then%20this%20recipe%20is%20for%20you.%20%20Nothing%20could%20be%20easier.%20%20The%3C/p%3E%3Cp%3Eoven%20does%20all%20the%20work.%3C/p%3E%3Cp%3Efitting%20lid.%3C/p%3E%3Cp%3EMix%20together%201%20TBS%20of%20the%20ginger,%20the%20zest%20of%3C/p%3E%3Cp%3Ethe%20lemon,%20the%20salt,%20pepper%20and%20cinnamon.%20%20Rub%20this%20mixture%20all%20over%20the%3C/p%3E%3Cp%3Echicken,%20using%20some%20on%20the%20inside%20as%20well.%20%20Place%20the%20cut%20apricots%20in%3C/p%3E%3Cp%3Ethe%20bottom%20of%20the%20roaster%20along%20with%20the%20lemon%20flesh,%20vanilla%20bean.%3C/p%3E%3Cp%3Ebroken%20bayleaf,%20cinnamon%20stick%20and%20thyme.%20%20Place%20the%20chicken%20on%20top.%3C/p%3E%3Cp%3Esqueeze%20the%20lemon%20juice%20over%20the%20chicken.%20%20Pour%20the%20cider%20into%20the%20pan%3C/p%3E%3Cp%3Earound%20the%20chicken.%20%20Cover%20tightly%20and%20roast%20in%20the%20preheated%20oven%20for%201%3C/p%3E%3Cp%3Ehour.%20%20Remove%20the%20lid%20and%20cook%20for%20a%20further%2020%20to%2030%20minutes,%20until%3C/p%3E%3Cp%3Ethe%20chicken%20is%20golden%20brown%20and%20cooked%20through.%20%20%20Baste%20with%20the%20pan%3C/p%3E%3Cp%3Ejuices%20for%20the%20last%2015%20minutes,%20every%20five%20minutes.%20%20Remove%20from%20the%3C/p%3E%3Cp%3Eoven.%20%20Remove%20the%20chicken%20from%20the%20pan.%20%20Set%20aside%20and%20keep%20warm.%3C/p%3E%3Cp%3ERemove%20and%20discard%20the%20bay%20leaf,%20thyme%20stalks,%20cinnamon%20stick%20and%3C/p%3E%3Cp%3Evanilla%20pod%20from%20the%20roasting%20tin.%20Mash%20the%20leavings%20in%20the%20pan%3C/p%3E%3Cp%3Etogether.%20%20%20Add%20the%20cream%20and%20enough%20chicken%20stock,%20whisking%20it%20in%20to%3C/p%3E%3Cp%3Egive%20you%20a%20sauce.%20%20Heat%20gently%20through.%3C/p%3E%3Cp%3EServe%20the%20chicken,%20warm%20%20.%20.%20.%20along%20with%20the%20sauce.%3C/p%3E%3Cp%3EThis%20was%20really%20delicious.%20%20We%20all%20really%20enjoyed%20it%20very%20much.%20%20%20I%20guess%20I%20will%20have%20to%20indulge%20myself%20in%20a%20bottle%20of%20this%20fabulous%20Cidre%20Raspberry%20every%20now%20and%20again.%20%20Many%20thanks%20to%20the%20people%20at%20Stella%20Artois%20for%20setting%20me%20up%20for%20this%20challenge.%20%20I%20hope%20they%20are%20happy%20with%20my%20results!%20%20This%20was%20a%20simple%20supper%20which%20tasted%20like%20a%20celebration.%20%20I%20think%20it%20would%20be%20a%20great%20dinner%20party%20dish%20for%20over%20the%20holidays.%20%20It%20practically%20cooked%20itself.%3C/p%3E%3Cp%3EStella%20Artois%20Cidre%20Raspberry%20is%20available%20at%20%20grocers%20across%20the%20UK%20in%20both%20500ml%20and%20300ml%20bottles.%20%20(The%20300ml%20in%204%20and%208%20multi-packs%20and%20the%20larger%20one%20as%20a%20single%20bottle.)%3C/p%3E){kind=link}
