Potage Crecy A Pureed Vegetable Soup

Ingredientes

  • 1 c. sliced carrots
  • 3 tbsp. butter
  • 1/2 c. minced onion
  • 4 c. low salt chicken broth
  • 1 bay leaf
  • 1 teaspoon dry basil
  • 1 teaspoon sugar
  • 1/2 teaspoon nutmeg
  • 1/3 c. uncooked white rice
  • 1/2 c. Half & Half (whole lowfat milk may be substituted)

Direcciones

  1. Saute/fry carrots for 5 min in butter without browning. Add in onion and saute/fry 3 min more. Add in stock, bay leaf, basil, sugar, nutmeg and rice. Cover and simmer for 30 min. Remove bay leaf. Puree mix and add in Half & Half. Heat to serving temperature.
