Receta Potage Crecy A Pureed Vegetable Soup

Ingredientes
- 1 c. sliced carrots
- 3 tbsp. butter
- 1/2 c. minced onion
- 4 c. low salt chicken broth
- 1 bay leaf
- 1 teaspoon dry basil
- 1 teaspoon sugar
- 1/2 teaspoon nutmeg
- 1/3 c. uncooked white rice
- 1/2 c. Half & Half (whole lowfat milk may be substituted)
Direcciones
- Saute/fry carrots for 5 min in butter without browning. Add in onion and saute/fry 3 min more. Add in stock, bay leaf, basil, sugar, nutmeg and rice. Cover and simmer for 30 min. Remove bay leaf. Puree mix and add in Half & Half. Heat to serving temperature.
