  • 2 lrg Large eggs separated
  • 1 lrg potato finely grated
  • 9 Tbsp. all-purpose flour
  • 2 Tbsp. whipping cream
  • 1 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  •     Vegetable oil as needed
  •     Lowfat sour cream for serving
  •     Caviar for serving

  1. Beat egg whites at medium speed with an electric mixer till stiff peaks form.
  2. Whisk egg yolks till thickened. Stir in potato and next 4 ingredients. Mix in egg whites.
  3. Pour oil to depth of 1/2 inch in a large heavy skillet; heat to 350 degrees. Drop potato mix by teaspoonfuls into warm oil; fry, in batches, 1 to 2 min on each side or possibly till golden brown. Drain on paper towels. Serve immediately with lowfat sour cream and caviar.
