Potato & Spinach Fritata

I used a bag of fresh baby spinach and sauteed it in a little of the bacon grease. I added a bit of freshly grated nutmeg and used shredded cheddar cheese, which I had on hand. My husband and son enjoyed it very much with some bacon on the side.
