%20when%20Justin%20Marx%20told%20me%20that%20he%20was%20going%20to%20send%20me%20some%20heirloom%20potatoes.%20All%20I%20had%20to%20do%20was%20pick%20the%20kind%20I%20wanted.%20I%20have%20to%20say%20that%20I%20adore%20Marx%20Foods.%20It%20isn't%20just%20because%20the%20people%20there%20are%20amazing.%20It%20isn't%20because%20Justin%20sent%20me%20Potatoes.%20It%20is%20because%20if%20you%20go%20to%20their%20website%20(which%20you%20have%20to%20do)%20you%20will%20see%20that%20they%20sell%20the%20most%20awesome%20ingredients%20that%20you%20can't%20find%20elsewhere.%20These%20are%20the%20awesome%20people%20that%20sent%20me%20my%20Geoduck%20and%20changed%20my%20life%20(waving%20to%20Justin).%3C/p%3E%3Cp%3ESo,%20I%20mulled%20over%20what%20I%20wanted%20to%20make%20with%20my%20Bintje%20Potatoes.%20Of%20course%20I%20did%20a%20little%20research%20on%20these%20puppies.%20I%20read%20that%20they%20make%20the%20ultimate%20french%20fry.%20BINGO!%20I%20had%20been%20toying%20with%20the%20idea%20of%20Potato%20Pancakes%20since%20Hanukkah%20was%20coming%20up.%20I%20would%20practice%20my%20potato%20pancake%20skills.%20Everyone%20goes%20crazy%20for%20my%20potato%20pancakes%20so%20I%20didn't%20really%20need%20to%20practice%20but%20pretend%20that%20I%20didn't%20say%20that.%3C/p%3E%3Cp%3ESo,%20I%20decided%20to%20go%20with%20simplicity.%20I%20wanted%20to%20taste%20the%20potato%20itself.%20I%20got%20out%20my%20gadget%20that%20makes%20ribbons%20out%20of%20food%20(remind%20me%20to%20tell%20you%20about%20my%20zucchini%20spaghetti%20some%20day)%20and%20made%20some%20potato%20ribbons.%3C/p%3E%3Cp%3EThese%20Bintje%20potatoes%20made%20the%20lightest%20and%20best%20chip%20I%20have%20ever%20tasted.%20No%20really.%3C/p%3E%3Cp%3ENext%20up%20were%20much%20coveted%20potato%20pancakes.%20I%20shredded%20about%202lbs%20of%20potatoes%20on%20a%20box%20grater.%20As%20I%20grate%20I%20put%20into%20a%20bowl%20of%20cold%20water%20to%20keep%20the%20potato%20from%20turning%20brown.%20I%20then%20have%20Dr.%20Food%20put%20the%20shredded%20potatoes%20in%20a%20towel%20and%20twist%20to%20get%20all%20the%20water%20out%20(this%20is%20a%20very%20important%20step%20to%20the%20%22FPP%22%20(Famous%20Potato%20Pancake).%3C/p%3E%3Cp%3EHot%20hot%20oil%20is%20another%20important%20step.%3C/p%3E%3Cp%3EThere%20ya%20have%20it!%20Oh,%20what%20did%20we%20have%20with%20it%20for%20dinner?%20Well,%20I%20was%20pooped%20so%20I%20just%20got%20something%20out%20of%20the%20freezer%20to%20reheat.%20Just%20a%20simple%20Balantine.%3C/p%3E%3Cp%3EGrate%20potatoes%20and%20put%20into%20a%20bowl%20of%20cold%20water%20as%20you%20go.%20Grate%20onion%20and%20add%20to%20bowl.%20When%20done%20grating%20drain%20potatoes%20and%20onion%20and%20place%20on%20a%20clean%20tea%20towel.%20Twist%20towel%20to%20get%20out%20as%20much%20water%20as%20you%20possibly%20can.%3C/p%3E%3Cp%3EPlace%20potato/onion%20mixture%20into%20a%20bowl%20and%20add%20eggs%20and%20flour.%20Mix%20well.%20Form%20into%20thin%20patties.%3C/p%3E%3Cp%3EHeat%20vegetable%20oil%20(about%201%201/2%20)%20until%20350%20degrees.%20Fry%20patties.%20Drain%20on%20paper%20towels%20and%20season%20with%20salt.%3C/p%3E){kind=link}
