Patti’s Pot Licker BBQ Beans, I will never admit that there are baked beans as good or better than mine. That said, Patti put together some BBQ beans this week that will make the strongest of us a “Pot Licker” … These are good both Hot or Cold and would be great tailgating or camping.

She took some Raider Red Chile & Cheese sausage and made “Magic”. A 2-hour smoke on the GMG with Texas Blend pellets. Oh man, these were good! And the sauce was so good that after the beans were gone I found myself cleaning out the pot… (But I didn’t say that!)

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

  1. Cooking Directions: Patti’s Pot Licker BBQ Beans
  2. Do a rough chop on your onions and cut the bacon into about 2-inch pieces. (Or use ends & pieces) In a large cast iron Dutch oven sauté bacon and onions. Blend in remaining ingredients and place your Dutch oven directly onto the Green Mountain Grill @ 225* (52c) for 2 hours or it thickens to your taste.
  3. When the beans have thickened to your liking it’s time to bring them in and give me a call. I’ll be right over…
  4. I use a Maverick ProTemp Instant Read Thermometer (Our Store) for checking meat temps.
  5. Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke, so it does not matter what kind of pellet you are using.
