,%20I%E2%80%99d%20suspected%20that%20the%20%E2%80%98jail%E2%80%99%20part%20would%20be%20a%20conceit%20of%20some%20sort,%20maybe%20a%20cleared-out%20storage%20space%20in%20a%20dark%20Victorian%20basement%20that%20was%20pretending%20to%20be%20something%20it%20wasn%E2%80%99t,%20but%20there%20was%20no%20doubt%20that%20this%20place%20had%20seen%20service%20as%20a%20correctional%20facility.%3C/p%3E%3Cp%3EThe%20iron%20rings%20on%20the%20walls%20spoke%20volumes%20about%20the%20way%20Victorian%20inmates%20were%20probably%20treated,%20and%20the%20cell%20door%20had%20a%20certain%20heft%20to%20it%20that%20screamed%20of%20tolerating%20no%20nonsense.%3C/p%3E%3Cp%3EIt%20isn%E2%80%99t%20a%20large%20prison%20%E2%80%93%20%20just%20a%20series%20of%20three%20small%20cells%20in%20the%20basement,%20down%20a%20small%20passageway%20next%20to%20the%20main%20steps%20and%20underneath%20a%20huge%20stone%20lion,%20its%20face%20eroded%20by%20the%20wind%20and%20rain.%20These%20cells%20saw%20service%20as%20late%20as%20the%20early%20nineties,%20used%20as%20an%20overflow%20drunk%20tank%20for%20much%20of%20their%20later%20years,%20probably%20because%20they%E2%80%99re%20conveniently%20close%20to%20the%20city%E2%80%99s%20busiest%20bars,%20but%20before%20that,%20they%20were%20holding%20cells%20for%20people%20waiting%20for%20the%20magistrates%20above%20ground.%3C/p%3E%3Cp%3EThe%20stories%20those%20walls%20could%20tell%20%E2%80%A6%3C/p%3E%3Cp%3EEach%20of%20the%20three%20cells,%20a%20makeshift%20bar%20and%20the%20corridors%20connecting%20them%20all%20together%20were%20decked%20out%20in%20bunting%20made%20from%20the%20pages%20of%20a%20Dickens%20novel,%20and%20lit%20gently%20with%20rope%20lights%20and%20candles,%20transforming%20the%20austere%20brick,%20with%20its%20harsh%20edges%20and%20brutal,%20claustrophobic%20architecture%20into%20something%20altogether%20warmer,%20more%20welcoming,%20more%20%E2%80%A6%20unexpected.%20but%20with%20an%20edge%20of%20the%20eerie%20about%20it.%3C/p%3E%3Cp%3EWe%20sat%20in%20the%20middle%20cell%20with%20six%20or%20seven%20other%20people,%20at%20a%20large%20table%20that%20filled%20the%20room.%20And%20then%20the%20food%20started%20to%20arrive%20%E2%80%A6%20homemade%20bread%20with%20peppery%20radishes%20and%20butter%20cut%20through%20with%20sea%20salt,%20a%20gazpacho%20of%20heritage%20tomatoes,%20as%20crisp,%20cold%20and%20clean%20as%20the%20cell%E2%80%99s%20whitewashed%20walls,%20spring%20onions,%20scorched%20on%20a%20griddle%20and%20served%20with%20a%20Calcot%20style%20sauce,%20Coeur-de-boeuf%20tomatoes%20of%20such%20phenomenal%20quality%20that%20the%20anchovies%20and%20marjoram%20laid%20on%20top%20of%20them%20seemed%20like%20a%20distraction.%3C/p%3E%3Cp%3EIt%20continued%20%E2%80%A6%20raw%20courgettes%20with%20lemon%20and%20borage,%20skewers%20of%20lambs%20liver,%20crusted%20with%20cumin,%20fillets%20of%20mackerel,%20cooked%20quickly%20on%20a%20huge%20bed%20of%20bay%20leaves,%20the%20scorched%20leaves%20smelling%20of%20both%20the%20garden%20and%20the%20sea,%20pig%E2%80%99s%20ears,%20sliced%20into%20thin%20strips%20and%20deep-fried,%20lovely,%20crisp,%20gelatinous%20chunks%20of%20fatty%20meat.%3C/p%3E%3Cp%3EWe%20emerged%20from%20the%20cell%20and%20climbed%20the%20steps%20right%20to%20the%20top%20of%20the%20clock%20tower,%20and%20stood%20in%20front%20of%20the%20huge%20clock%20faces%20and%20gaze%20over%20the%20city%E2%80%99s%20rooftops%20as%20the%20sun%20started%20to%20set,%20bathing%20Leeds%E2%80%99%20skyline,%20a%20mix%20of%20Victorian%20grandeur%20and%20modern%20bravado,%20in%20the%20blue%20sheen%20of%20twilight.%3C/p%3E%3Cp%3EBack%20downstairs,%20there%20were%20bowls%20of%20cherries%20on%20ice,%20madeleines%20and%20fresh%20berries,%20strawberry%20gazpacho%20and%20Laynes%E2%80%99%20beautiful%20coffee,%20served%20with%20a%20description%20of%20what%20it%20was%20and%20where%20it%20came%20from.%3C/p%3E%3Cp%3EThe%20menu%20was%20geared%20towards%20the%20season,%20and%20it%20matched%20the%20hot%20day%20perfectly,%20full%20of%20light%20and%20clear%20flavours%20and%20textures,%20so%20much%20resting%20on%20the%20superb%20quality%20of%20the%20ingredients.%20This%20was%20a%20masterclass%20in%20the%20idea%20that%20sourcing%20the%20best%20and%20cooking%20it%20simply%20is%20the%20basis%20of%20any%20successful%20meal.%3C/p%3E%3Cp%3EIt%E2%80%99s%20hard%20to%20write%20about%20We,%20the%20Animals%20and%20get%20across%20the%20brilliance%20of%20it%20all%20%E2%80%A6%20the%20combination%20of%20location,%20and%20presentation,%20and%20service,%20and%20food.%20It%20must%20have%20been%20a%20hard%20act%20to%20get%20right%20%E2%80%93%20so%20many%20things%20that%20could%20go%20wrong%20cooking%20for%20so%20many%20people%20in%20such%20an%20unusual%20environment%20%E2%80%93%20but%20it%20went%20like%20clockwork,%20a%20slick,%20well%20thought%20through%20and%20professional%20experience.%3C/p%3E%3Cp%3EWe,%20the%20Animals%20left%20me%20inspired%20by%20their%20cooking,%20by%20the%20way%20that%20they%20juggled%20with%20flavours%20and%20how%20they%20sometimes%20just%20left%20ingredients%20alone%20to%20speak%20for%20themselves,%20and%20how%20that%20was%20just%20exactly%20what%20was%20needed.%3C/p%3E%3Cp%3EI%20was%20stunned%20by%20their%20ingenuity%20in%20presenting%20a%20menu%20as%20good%20as%20this%20in%20a%20venue%20as%20unusual%20as%20it%20turned%20out%20to%20be.%3C/p%3E%3Cp%3EThat%20took%20courage,%20and%20that%E2%80%99s%20to%20be%20admired%20and%20celebrated.%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
