- 2 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1/2 cup sour cream
- 2 large eggs
- 1 tsp vanilla extract
- 1 stick unsalted butter
- 2 tbsp poppy seeds
- For the Icing (Optional)
- 3/4 cup cream cheese
- 1/4 cup confectionersâ sugar, sifted
- 2 tbsp fresh lime juice + zest
- 1 tsp poppy seeds

%20.%20In%20summers%20they%20are%20like%20magical%20coolers%20which%20can%20soothe%20you%20from%20inside%20out.%20It%20has%20been%20quite%20long%20since%20I%20baked%20my%20last%20cake%20and%20this%20time%20craved%20to%20have%20cool%20cake%20%7B%20Literally%20;-)%20&%20Otherwise%20%7D%20.%20So%20after%20some%20brainstorming,%20decided%20to%20add%20zest%20and%20juice%20of%20fresh%20limes%20and%20a%20handful%20of%20poppy%20seeds%20to%20the%20batter.%20The%20muffins%20were%20rocking%20-%20in%20taste,%20texture%20and%20looks%20of%20course.%20Pack%20each%20muffin%20in%20a%20foil%20to%20avoid%20crumbling%20and%20you%20are%20all%20set%20with%20a%20homemade%20snack%20on%20the%20weekend%20vacation.%20Relish%20cool%20muffins%20out%20in%20the%20bright%20sunny%20days%20and%20pat%20your%20back%20too,%20hmmm...you%20did%20it%20again%20!!!!!!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20degrees%20F.%3C/p%3E%3Cp%3EButter%20a%20your%20muffin%20pan,%20alternatively%20line%20with%20paper%20muffin%20cups.%3C/p%3E%3Cp%3EIn%20bowl%20mix%20the%20sugar%20and%20zest%20of%20limes%20together%20with%20a%20blender%20until%20the%20sugar%20is%20moist%20and%20the%20fragrance%20of%20lime%20is%20strong.%3C/p%3E%3Cp%3EAdd%20the%20flour,%20baking%20powder,%20baking%20soda%20and%20salt%20to%20the%20lime/sugar%20mixture%20and%20combine%20well.%3C/p%3E%3Cp%3EIn%20another%20bowl,%20whisk%20together%20the%20sour%20cream,%20eggs,%20vanilla,%20lime%20juice%20and%20melted%20butter%20together,%20until%20well%20blended.%3C/p%3E%3Cp%3EAt%20this%20stage%20mix%20the%20liquid%20ingredients%20with%20dry%20ingredients%20and%20blend%20well%20for%20a%20short%20duration.%3C/p%3E%3Cp%3EStir%20in%20the%20poppy%20seeds,%20blend%20again%20for%20a%20short%20duration.%3C/p%3E%3Cp%3EPour%20the%20batter%20evenly%20among%20the%20muffin%20moulds.%3C/p%3E%3Cp%3EBake%20for%20~%2020%20minutes,%20or%20until%20the%20tops%20are%20golden%20and%20a%20thick%20knife%20inserted%20into%20the%20center%20of%20the%20muffins%20comes%20out%20clean.%3C/p%3E%3Cp%3ECarefully%20remove%20each%20muffin%20from%20its%20mold%20and%20place%20on%20a%20wire%20rack%20to%20cool%20down.%3C/p%3E%3Cp%3EEnjoy%20warm%20or%20not%20so%20warm%20after%20the%20shoots.....!%3C/p%3E%3Cp%3EAll%20set%20to%20enjoy%20the%20little%20bites%20with%20my%20shot%20of%20espresso........!!!!!!!!%3C/p%3E%3Cp%3ELove%20these%20Cute%20Muffins.....!!!!!!!!%20(and%20did%20you%20notice%20,%20I%20did%203%20different%20sizes%20of%20muffins)%3C/p%3E%3Cp%3EEither%20sprinkle%20immediately%20with%20fine%20sugar,%20or%20cool%20the%20muffins%20completely%20on%20the%20rack%20before%20doing%20icing%20them.%20In%20a%20bowl,%20whisk%20cream%20cheese,%20sugar,%20lime%20juice%20+%20zest%20and%20poppy%20seeds.%20Put%20this%20mixture%20in%20a%20ziplock%20bag%20and%20decorate%20as%20you%20like.%3C/p%3E%3Cp%3EA%20Proud%20Lime%20'N'%20Poppy%20seed%20Muffin.%20Aaa...it%20was%20Scrumptuous%20!!!!!!!!!%3C/p%3E%3Cp%3EHope%20you%20like'em%20and%20give'm%20shot...%20Cheers,%20Sonia%20!%3C/p%3E){kind=link}
