- Provencal Tomatoes - Adapted From Les Meilleures Recettes de Provence by Christian Etienne
- 15 medium to large tomatoes, washed and dried
- 1 cup chopped fresh parsley, firmly packed, divided
- 10 cloves of garlic, minced
- 4 cups fresh bread crumbs
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup Parmesan cheese, divided
- Olive oil

%20and%20it%20was%20in%20the%20middle%20of%20a%20face-lift%20while%20we%20were%20there%20-%20jack-hammering%20and%20bull-dozing%20every%20where%20we%20went...but%20behind%20all%20the%20scaffolding%20and%20piles%20of%20debris%20(seriously,%20the%20entire%20city%20was%20a%20construction%20zone!)%20we%20managed%20to%20find%20fabulous%20food...%3C/p%3E%3Cp%3ETaking%20a%20picture%20of%20the%20main%20part%20of%20our%20meals%20was%20easy%20-%20but%20I%20often%20overlooked%20the%20side%20dishes%20-%20and%20Provencal%20Tomatoes%20are%20a%20side%20dish%20-%20so%20I%20didn't%20get%20a%20photo%20of%20any%20authentic%20Provencal%20Tomatoes...but%20lucky%20for%20me%20(and%20you)%20they%20are%20very%20easy%20to%20make%20...all%20you%20need%20are%20some%20really%20nice%20tomatoes...%3C/p%3E%3Cp%3EThis%20time%20of%20year%20it's%20not%20easy%20to%20find%20great%20tasting%20tomatoes...which%20is%20why%20Provencal%20Tomatoes%20are%20so%20good%20-%20a%20bland,%20tasteless%20tomato%20turns%20into%20something%20quite%20fabulous%20with%20just%20a%20little%20help.%3C/p%3E%3Cp%3EAnd%20it%20turns%20out%20that%20Provencal%20Tomatoes%20look%20fabulous%20on%20a%20Christmas%20buffet%20because%20they're%20red%20and%20green...Ho-Ho-Ho!%20%20But%20they'd%20be%20great%20for%20a%20New%20Year's%20buffet,%20too...or%20any%20other%20buffet...I%20like%20the%20word%20buffet.%20%20And%20I%20like%20buffets.%20%20Duh.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20%20Cut%20tops%20off%20tomatoes%20and%20make%20a%20very%20small%20slice%20on%20the%20bottom,%20just%20to%20tomatoes%20will%20sit%20straight.%20%20Very%20carefully,%20scoop%20out%20the%20insides%20of%20the%20tomatoes,%20leaving%20about%201/4-inch%20all%20around.%20%20Turn%20tomatoes%20upside%20down%20on%20paper-toweling%20to%20dry%20for%2015%20minutes.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20combine%203/4%20cup%20parsley%20with%20garlic,%20bread%20crumbs,%20salt,%20pepper%20and%203/4%20cup%20of%20Parmesan%20cheese.%20%20Mix%20well.%20%20Stuff%20tomatoes%20with%20bread%20crumb%20mixture,%20stuffing%20firmly.%20%20Place%20each%20tomato%20onto%20a%20baking%20dish%20or%20in%20a%20cupcake%20tin,%20which%20works%20great.%20%20Top%20each%20tomato%20with%20a%20sprinking%20of%20the%20remaining%20parsley%20and%20a%20sprinkling%20of%20the%20remaining%20Parmesan%20cheese.%20%20Drizzle%20olive%20oil%20over%20the%20tops%20of%20each%20tomato.%20%20Bake%20at%20350%20for%2010%20to%2015%20minutes%20or%20until%20the%20tomatoes%20have%20softened%20a%20bit%20and%20the%20tops%20of%20the%20tomatoes%20are%20lightly%20browned.%20%20Serve%20as%20a%20side%20dish.%20%20Serves%2015,%20one%20each.%3C/p%3E%3Cp%3EThink%20of%20these%20as%20a%20bite%20of%20Provence...they%20are%20colorful,%20delicious%20and%20a%20nice%20addition%20to%20any%20meal.%3C/p%3E){kind=link}
