  •     Salt to taste
  •     Freshly-grnd white pepper to taste

  1. Peel the plantains and cut into 1/2-inch slices. Soak them in cool, salted water for 20 min. Drain and pat dry.
  2. In a heavy frying pan, saute/fry the plantains in lard till they are tender, about 15 min. The pcs will be gold colored and will brown a little. Drain well on paper towels, then crush with a pestle or possibly mallet till they break into bits.
  3. Heat the beef stock in a large saucepan and add in the plantain. Simmer for 15 min, adjust seasoning, then ladle into bowls. Garnish with generous handfuls of grated parmesan.
  4. Comments: Simple but exotic - deceptively substantial as a first course; serve warm to 6 people, follow with grilled meat and juicy tropical fruits.
