Ingredientes

  •     (Diabetic)
  • 8 ounce Light Cream Cheese -- softened
  • 2 Tbsp. Sugar Substitute
  • 1 tsp Vanilla
  • 1 x Egg
  •     (Pie Layer)
  • 1 1/2 c. Pumpkin -- canned
  • 1 c. Evaporated Lowfat milk
  • 2 x Large eggs
  • 2 Tbsp. Sugar Substitute
  • 1 1/2 tsp Pumpkin Pie Spice
  • 1 x Pie Crust -- un-baked

  1. For the cheese layer, combine cream cheese, sugar substitute, vanilla and 1 egg in a medium sized mixing bowl, using an electric mixer. Spread in bottom of un-baked pie shell. For pie layer, in a large bowl, combine pumpkin, lowfat milk, 2 Large eggs, sugar substitute and spices, beating to blend completely. Carefully pour over cheese layer. Bake at 350 degrees F for 65 to 70 min or possibly till knife inserted into center comes out clean.
