%20and%20cinnamon,%20nutmeg,%20and%20ginger.%20Truthfully,%20we%20didn't%20eat%20these%20for%20breakfast.%20We%20had%20them%20for%20lunch.%20You%20know%20how%20it%20is%20on%20the%20last%20day%20before%20a%20scheduled%20grocery%20shopping%20trip...we%20were%20out%20of%20everything!%20No%20lunch%20meat.%20Not%20that%20it%20mattered,%20we%20were%20out%20of%20bread%20too.%20This%20meant%20that%20grilled%20cheese%20or%20PB&J%20were%20also%20out%20of%20the%20question.%20My%20husband%20had%20taken%20the%20leftovers%20from%20our%20last%20night's%20dinner%20for%20his%20lunch.%20Not%20even%20a%20freezer%20pizza,%20fish%20stick,%20or%20package%20of%20ramen%20noodles%20in%20sight!%20Of%20course%20the%20first%20question%20out%20of%20my%20daughter's%20mouth%20when%20I%20picked%20her%20up%20from%20pre-K%20was,%20%22What's%20for%20lunch?%22%20I%20had%20to%20think%20hard%20before%20I%20enthusiastically%20announced,%20%22Pancakes!%22%20Enthusiastically,%20because%20I've%20found%20that%20if%20I%20don't%20take%20the%20right%20approach%20when%20announcing%20some%20of%20my%20meals,%20that%20the%20kids%20are%20a%20%22tough%20sell%22%20and%20don't%20jump%20on%20my%20band%20wagon...or%20should%20I%20say%20chuck%20wagon?%20My%20daughter%20was%20still%20a%20little%20hesitant.%20%22Awww,%20pancakes!?%20I%20wanted....%22%20But%20after%20I%20promised%20to%20let%20her%20help%20she%20stopped%20complaining.%20And%20better%20yet,%20when%20she%20took%20the%20first%20bite%20of%20these%20sweet,%20fluffy,%20pumpkin%20spiced%20pancakes,%20she%20wasn't%20complaining%20at%20all!%3C/p%3E%3Cp%3EHere's%20what%20I%20used:%20Heart%20Smart%20Bisquick,%20skim%20milk,%201%20egg,%203/4%20cup%20pumpkin%20puree,%20sugar,%20vanilla,%20cinnamon,%20nutmeg,%20and%20ginger.%3C/p%3E%3Cp%3EI%20just%20followed%20the%20directions%20for%20the%20pancakes%20on%20the%20side%20of%20the%20box.%20There's%20a%20note%20under%20the%20recipe%20that%20reads%20Light%20and%20Fluffy%20Pancakes:%20Stir%20in%202%20tablespoons%20sugar%20and%201%20teaspoon%20vanilla%20with%20the%20egg.%20So%20I%20did%20that.%20Then%20I%20stirred%20in%20the%20pumpkin%20and%20spices%20before%20mixing%20it%20all%20together.%3C/p%3E%3Cp%3EThe%20batter%20was%20a%20little%20thick,%20so%20I%20ended%20up%20adding%20some%20water%20until%20it%20was%20thin%20enough%20to%20pour%20by%201/4%20cupfuls%20onto%20my%20oiled%20and%20heated%20griddle%20pan.%3C/p%3E%3Cp%3EThese%20were%20delicious%20topped%20with%20butter%20and%20warm%20maple%20syrup%20and%20an%20extra%20sprinkle%20of%20nutmeg.%20So%20much%20for%20heart%20healthy...%3C/p%3E%3Cp%3EI'm%20thinking%20of%20repeating%20this%20recipe%20tomorrow...only,%20we'll%20actually%20eat%20it%20for%20breakfast%20this%20time,%20possibly%20accompanied%20by%20bacon%20twists%20and%20good%20strong%20coffee.%20Perfect%20for%20a%20blustery%20November%20Saturday%20morning!%3C/p%3E%3Cp%3EPumpkin%20Spiced%20Pancakes%3C/p%3E%3Cp%3EStir%20sugar%20and%20vanilla%20into%20egg.%20Combine%20all%20ingredients%20and%20stir%20until%20blended.%20Pour%20by%20slightly%20less%20than%201/4%20cupfuls%20onto%20hot%20greased%20griddle.%20Cook%20until%20bubbles%20break%20on%20the%20surface.%20Turn;%20cook%20until%20golden.%20Yield:%20about%2020%20pancakes.%3C/p%3E){kind=link}
