%20early%20Thanksgiving%20party.%20After%20that%20party%20I%20realized%20that%20we%20don't%20really%20have%20to%20wait%20for%20Thanksgiving%20to%20give%20thanks%20to%20people%20we%20love%20and%20care%20about,%20it%20can%20be%20and%20should%20be%20done%20any%20time.%3C/p%3E%3Cp%3EI%20was%20asked%20to%20bring%20a%20dessert%20and%20I%20thought%20something%20with%20pumpkin%20will%20be%20appropriate.%20I%20found%20a%20recipe%20for%20Pumpkin%20Tiramisu%20on%20Martha%20Stewart's%20site%20and%20I%20planned%20to%20make%20it.%20Recipe%20used%20uncooked%20pumpkin%20puree%20for%20layering%20with%20the%20lady%20fingers.%20I%20wasn't%20sure%20if%20it%20would%20be%20too%20pumpkiny,%20so%20I%20scratched%20that%20recipe.%20Then%20I%20found%20vegan%20chef%20Chloe%20Coscarelli's%20Vegan%20Pumpkin%20Tiramisu%20and%20after%20reading%20through%20the%20mostly%20positive%20reviews,%20I%20made%20it%20for%20the%20party.%3C/p%3E%3Cp%3EThis%20dessert%20is%20a%20little%20time%20consuming%20to%20make,%20but%20it%20totally%20worth%20the%20effort.%20Pumpkin%20cr%C3%A8me%20layer%20can%20be%20made%20at%20least%202%20days%20ahead%20and%20kept%20in%20the%20refrigerator%20until%20ready%20to%20use.%20Once%20the%20cakes%20are%20baked%20and%20the%20trifle%20is%20made,%20it%20needs%20to%20be%20refrigerated%20for%20at%20least%203~4%20hours%20or%20overnight%20to%20set.%20The%20original%20recipe%20uses%20whipped%20coconut%20cream%20to%20make%20it%20completely%20vegan,%20but%20I%20used%20regular%20whipping%20cream%20since%20I%20never%20whipped%20coconut%20milk%20and%20didn't%20want%20to%20take%20try%20my%20luck%20at%20this%20party.%3C/p%3E%3Cp%3EThe%20trifle%20was%20well%20received%20at%20the%20party%20but%20what%20made%20me%20really%20happy%20was%20my%20mom%20and%20sister%20really%20liking%20it.%20I%20was%20skeptical%20if%20they%20would%20like%20the%20pumpkin%20and%20chocolate%20combination.%20They%20really%20enjoyed%20the%20combo.%3C/p%3E%3Cp%3EI%20bought%20this%20trifle%20dish%20specially%20to%20take%20to%20the%20party.%20After%20filling%20up%20the%20trifle%20dish,%20I%20still%20have%20some%20cake%20and%20filling%20leftover%20that%20I%20used%20to%20make%20individual%20trifles.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EFor%20the%20Cake%20Layer:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EMake%20the%20Pumpkin%20Cr%C3%A8me:%20In%20a%20small%20bow,%20whisk%20cornstarch%20and%20water%20to%20form%20a%20smooth%20slurry.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20medium%20saucepan,%20whisk%20together%20coconut%20milk,%20pumpkin%20puree,%20maple%20syrup,%20pumpkin%20pie%20spice%20and%20salt.%20heat%20over%20medium%20heat%20until%20it%20just%20begins%20to%20boil,%20about%205%20minutes.%3C/p%3E%3Cp%3ESlowly%20stir%20in%20cornstarch%20mixture%20while%20whisking%20continuously.%20Cook%20until%20the%20mixture%20becomes%20very%20thick,%20about%205%20minutes,%20whisking%20frequently.%3C/p%3E%3Cp%3EPour%20the%20mixture%20into%20a%20bowl,%20let%20cool%2015%20minutes.%20Then%20place%20a%20plastic%20wrap%20touching%20the%20top%20of%20the%20cr%C3%A8me.%20Refrigerate%20for%20a%20few%20hours%20or%20overnight.%3C/p%3E%3Cp%3EMake%20the%20Cake:%20Preheat%20oven%20to%20350%C2%B0F.%20Lightly%20grease%203%208%22%20or%209%22%20round%20cake%20pans%20and%20line%20the%20bottoms%20with%20parchment%20paper.%20(I%20used%202%208%22%20round%20cake%20pans%20that%20are%203%22%20deep).%3C/p%3E%3Cp%3EIn%20a%20large%20mixing%20bowl,%20combine%20flour,%20sugar,%20baking%20soda%20and%20salt.%3C/p%3E%3Cp%3EIn%20a%20separate%20mixing%20bowl,%20whisk%20together%20almond%20milk,%20oil,%20vinegar%20and%20vanilla.%20Pour%20the%20wet%20ingredients%20into%20the%20dry%20ingredients%20and%20whisk%20just%20until%20combined.%20Do%20not%20over%20mix.%3C/p%3E%3Cp%3EDivide%20the%20batter%20evenly%20between%20the%20prepared%20pans%20and%20bake%20for%2018%20~%2020%20minutes%20or%20until%20a%20cake%20tester%20inserted%20into%20the%20center%20of%20the%20cake%20comes%20out%20clean%20(I%20baked%20for%2023minutes%20in%20my%208%22%20round%20pans).%20Cool%20completely%20before%20assembling.%3C/p%3E%3Cp%3EMake%20the%20espresso%20soak:%20In%20a%20small%20bowl,%20whisk%20all%20the%20soak%20ingredients%20until%20the%20espresso%20dissolves.%3C/p%3E%3Cp%3EMake%20Whipped%20Cream:%20Refrigerate%20the%20bowl%20and%20the%20blades%20used%20for%20whipped%20for%20at%20least%2030%20minutes.%20Whip%20heavy%20cream%20along%20with%20sugar%20until%20stiff%20peaks%20form.%3C/p%3E%3Cp%3ETo%20Assemble:%20In%20a%20large%20trifle%20dish,%20place%20one%20layer%20of%20the%20cake%20(trim%20to%20fit)%20at%20the%20bottom%20and%20drizzle%20it%20with%20the%20espresso%20soak.%20Spread%20a%20layer%20of%20the%20pumpkin%20cr%C3%A8me%20on%20top,%20followed%20by%20the%20whipped%20cream%20layer.%20Repeat%20this%20process%20for%202%20more%20layers%20until%20all%20components%20are%20used%20up.%20Top%20with%20grated%20chocolate.%20You%20could%20also%20cut%20the%20cake%20to%20fit%20smaller%20individual%20trifle%20dishes.%20(I%20cut%20my%202%20cakes%20into%20half%20and%2
